Ingredients you'll need:
Granita:
2/3 cup (157ml) golden beet
1 cup (236ml) apricot juice
1/2 cup (118ml) champagne
Cream:
1/4 cup (60ml) heavy cream
3tbsp (51g) mascarpone
Cacio e Pepe:
1/2 lb pasta
Salt to taste
2 tablespoons olive oil
2 teaspoons (6g) coarse ground black pepper
1 cup fresh grated Parmesan
1/2 cup fresh grated pecorino
Fresh black pepper and salt to taste
More grated parmigiana reggiano
Steak:
it's steak and pickles come on
Chocolate Lava Cake:
1/2 cup 113gbutter
6.5 ounces184 dark chocolate
2 eggs
3 egg yolks
1/4 cup (60g) sugar
1tbsp (21g) brown sugar
1/2 teaspoon (2g)salt
2 tablespoons (21g) all purpose flour
marshmallows for toasting

Chocolate lava cake is not just undercooked chocolate cake. That's not what makes the centre molten. You take a frozen cylinder of ganache and you set it in the ramekin so that as the outside cooks fully, the inside becomes molten!

If you spend enough time cooking you will develop hands that can handle much higher temperatures without really hurting, as far as I know Josh calls it asbestos hands I mostly just use it as a gag with friends. Pull cookie sheets out of the oven bare handed and shit.

I made this for my family last night, it was amazing! (Besides me messing up on the sauce for the pasta...I couldn’t work fast enough). I’ve never made/cooked steak or lava cake before and it was a fun experience. My family really enjoyed it. I’m planning on making the lava cakes and Granita for a banquet coming up in a few months (if it goes through).

I know I'm a little late but just made the chocolate lava cake following this recipe and wow it was beautiful, didn't have marshmallows so went for hagen das ice cream on top with some strawberries, such an easy recipe, will definitely be making it again!

My superintendent was steadfast in wanting her steak medium 😒 when we had our work luncheon. I asked if she trusted me and she surprisingly agreed to letting me try changing her mind. 1 sous vide T-bone steak, seared over a charcoal chimney so hot the sun was jealous, later...she could only mutter a few words with eyes the size of dinner plates and a smile from ear to ear. Later she was shopping on Amazon for a sous vide cooker and asking what the hell a charcoal chimney was 😅 If you cook it right, you can change people's minds.

Hey Josh thanks for the video. I followed the recipe for the lava cake, gram per gram. I found the cake a little salty ( and i love salt!). I will try with 1/2 a tspoon of salt next time and maybe an additional 10g of sugar. A really rich cake. Thanks once again.
