Mr. Sausage, the reason your skin isn't crisping up is because you're not letting it dry out after you've stuffed it. Normally, sausages are hung in a cool room for at least a few hours before they're cooked. If you don't do this, essentially what you're making is a steamed sausage. This also leads to increased risk of bursting, because the water expands and ruptures the casing. For a shortcut method, instead of pan-frying the sausage, you could put it under the broiler, or cook it on a charcoal bbq. Or at the very least, give the sausages a wipedown with a paper towel and leave them for a couple hours in a cool, dry environment.

You should look into leaving the meat sitting overnight with a bit of water/red wine (after seasoning). This ensures that the meat sticks together to give you the sausage feel that you're used to. It prevents it from falling apart and it might just prevent the issue with the skin not crisping up.

A finer grind and mixing the sausage a bunch will also help. Like, a stand mixer for at least a few minutes. It helps the proteins bind up. Going too far will make a hotdog like snap though. If that is the desire, do the same mixing with ice cubes until the ice cubes melt, then a while longer

The water came from the osmotic potential between the salt and highly salted sauce you added and the cells. The muscle and fat cells have a semi-permeable membrane, and since the salt and sauce were "saltier" than the inside of the cells, it drew out the water from the inside of the cells.

he needs to rest the uncooked cased sausages in the refrigerator overnight; allows all the forces and pressures inside the casing to settle and equalize and results in a much better cooking sausage where the meat adheres to the casing which gets crisp. It also has the added bonus of mildly curing the sausage due to the salt content, resulting in a better texture when cooked.

you should dehydrate the a1 steak sauce, grind it into a powder and add that so you minimize the moisture. I'm no expert by any means but redoing this with a dry, powdered form of the sauce might work
