I think you're onto something here? The yeast inflates the proteins with gas separation thereby creating a softer sausage, which is why you had the undercooked problem because pan fry cooking isn't retaining enough heat to cook the meat all the way through as it would a solid meat, so if you smoked that instead thus the air pockets would absorb more heated smoke? Fill the casing 50% of what you would normally fill it with, let it sit at room temperature to expand, then smoke it.

You can mess up your stomach a LOT when baking (for example pizza) with too much yeast. I do not recommend eating a lot of..yeast sausage :D

Tbh the result being a "good" end product wasn't that surprising to me as yeast extract is a commonly used taste enhancer in the industry due to all the MSG it naturally contains. A better result would have been achieved by simply using pure MSG so you wouldn't have had all the added water and the messed up texture of the sausage.

The sausages were auto inflating, there was a burst, mr sausage confidently bit into undercooked pork and yet somehow we still got 4/5. Truly yeast was destined for this purpose

If you want to improve it a crumb, dont forget to give the yeast a little honey or sugar so it has stuff to eat, and maybe a dash of flour, after this, boil and deep fry em! Youll end up with basically a meatloaf sausage! But honestly a great idea for a sausage experiment!!

The yeast doesn't need anything other than water. In fact sugar can slow down its activation. It comes with something to eat already. Unless you meant something in the sausage!

I think the amount of umami ordinary yeast can bring to any meal is vastly underrated. Maybe if you kill the yeast before sausaging, they won’t be blowin up like balloons, although that might have been the best part

Or just use nutritional yeast, which is deactivated (aka dead) and just used as a cheesy vegan seasoning. But I think the active dry yeast ended up helping the texture soften a little bit up to the point it burst the sausages before they were cooked, lol. I think maybe half nutritional yeast and half active dry yeast might be the perfect combination of nice yeasty flavor and *not too* soft texture!

Giving a thumbs up to you finding a way to get Trichinosis and a yeast infection all at the same time. If you start feeling drunk for no reason, you may have an active yeast colony brewing your waste in your stomach or intestines.

Pork in the US is pretty rarely infected with trich these days due to regulations. Still wouldn’t try it though.

The digestive tract kills off yeast after a while. Not immediately, but it happens. He also cooked the yeast. Maybe not the yeast in the undercooked pork, but probably.

Yeast generally consists of about 5% glutamates which is essentially just pure MSG. So it makes sense why it tastes great!

Is this why active dried yeast is a vegan cheeseish thing? I saw so many recipes that used active dried yeast as a substitute for parmesan and such and never understood why

usually we use nutritional yeast, which is dry but not active and tends to be fortified with b12 and other nutrients (hence the name). it does taste a bit like Parmesan cheese, without the salt or fat... very glutamic (usually called "nutty" in food writing, but it's a lot more like dried peas, really)

I believe the recipe would have worked even better if you first mixed the yeast and the ground pork, then let it rest, and only then added the salt and filled it into the sausage casings. Yeast doesn't tolerate salt well so you probably killed a lot of of it off and it would have risen a lot more otherwise.

Did you miss the first 20 seconds of the video? He already let it rest long enough for the yeast to activate. Sure, he could have added a little bit of sugar too but at one point he had to mix in the salt.

@@Juleru That was letting it bloom, not rest. Different step of the process. Resting happens after you mix it with the "dough". Blooming just activates the yeast. And fact of the matter is, he didn't let it rest before putting the salt in, only afterwards.

You could use less water, cook the yeast in a small pan (basically kill the yeast), since yeast is a fungi it would be very similar to plain mushroom broth (it's exactly what yeast extract is, a sausage you've already done). You could then add that liquid with the meat and if I remember correctly that was a 5/5 sausage.

"It's still warm" -Yes! Yeast metabolise sugar and generate their own heat. "It kinda smells like buttered popcorn" -That's Diacetyl. The yeast can make a lot of this quite fast if it gets too eager, and it's often considered a fault when brewing. The yeast is also able to consume the diacetyl over time, but it's a lot slower. Also note, yeast is a fungi, and will provide flavours in the line of mushrooms when cooked. Lots of MSG and broth-like notes in those, so no suprises that it works well here.

Rather than letting it ferment in-casing, I'd recommend letting the mix ferment prior to putting it in the casing, and even before adding salt or pepper, as the salt will inhibit the growth of the yeast. After putting it in the casing though, I'd recommend moving quickly, though I'm less certain about that part, as my degree in biotech engineering does not cover a lot of material sciences. It did seem rather watery as well though, so less water perhaps?
