Lol, yes!! These freeze very well!☺ I feel like these are better for savory dishes, but maybe that's because I added garlic powder and salt to the batter😂
Well, thank you for asking about the sticky plantain. Once it cooled I was able to make the tortillas. It was thinner than yours I guess too much liquid or be too long in my food processor and while it was warm it was too sticky, but once it cooled I managed to make tortillas and they were pretty tasty. And I looked up your polenta recipe and I will try that sometime as well. Thank you for your good work and sharing it with us.

I am glad to hear it!😊 It might be that your food processor was too good, lol, I used a very inefficient cheap little model that left the plantain ground rather coarse. Never even thought of what would happen in a good food processor. I'm so glad to know about the fridge trick in case it happens to someone else!
RealWorldAIP I just let it sit out 20 mins. Or so. Our house is about 57 degrees. I am excited to say the last one I made I fried with a little extra oil and it was crispy and very tasty.

Like you I was sick searching for many years to find out why I was so sick - over 30 years. Diagnosed with so many things that I am sure are all celiac related. I have been watching your videos non-stop and telling all my friends about the things your make! I have seen you mention that you have a sleep disorder. I was wondering what you have. I was diagnosed with hypersomnia a few years ago. Wondering if that is just another symptom of celiac and I was misdiagnosed. thanks again for all of your time you take to help others - especially newbies like me. Hey, Stacy! Twice now I have roasted plantains in my instant pot. Both times they tasted very off putting. Kind of smokey. Is this a taste preference thing or am I missing something? TIA!

I added too much water I guess. its sticky and hard to peel off of parchment paper. can I add anything to make them work or would cooling it down some first work do you think?
I am probably too late but I would smoosh the mix into a mini loaf pan, refrigerate overnight and call it polenta! ☺ What became of the mushy tortillas?
Do these have to be eaten or cooked right away? Or can they be placed between layers of parchment paper, stored in the fridge, and cooked as needed? Is it easy to rewarm them? Does it change the pliability? So sorry for all the questions, amazing job as always. Thank you for sharing!

Can yellow plantains be used in this recipe? My grocery store didn’t have any Green 😟. I did get sweet potatoes but mine are different than the ones you use
The yellow plantains are sweet, so the recipe might work texturally, but they would be sweet- probably delicious spread with coconut butter, cinnamon and maybe some fruit and rolled up!
I don't think the green bananas would hold together in one piece, plantain has more of a sticky texture that holds together better. It might still be worth a shot though, worst thing that could happen is the tortillas would fall apart and you could make hash browns instead 😄
