Here in Brazil (bahia) this is a traditional food and is called acarajé, we split in half and stuffed with vatapá, caruru and pepper, the acarajé pasta has a harder consistency and we fry it in palm oil. Thanks for the video make more traditional foods from mother africa.

Nice. I watched a documentary where a woman was cooking acarajé in Bahia, Brazil. Bahia has deep West African roots, particularly Yoruba based on those brought there during slavery. Traditionally, we also fry akara with palm oil.

Hi. Nice video. You don't have to use your hands to scrub the peels. You can remove the peels in less than a minute with the the lowest range of your blender and the beans will remain intact while the peel will be off.. Just make sure there is a lot of water in it. Thanks for sharing
Thanks for the recommendation. I do that when I have a large amount of beans to skin. I dont feel it is necessary for me to use it for a cup of beans 😁.... moreover I just wanted to go old school on this and make it as basic as it can be(no bells or whistle). Looks so good, love your channel. Can you use any type of beans for akara? also, do you ever leave the batter to ferment before you whip it? or is that a different recipe
Thanks much. Well not any type of beans can be used for traditional Nigerian akara. The most commonly used ones are honey beans, brown beans, black eye peas. No I do not leave the batter to ferment cos it will become rancid(sour). I only soak the dry beans in salted water to get it hydrated and soften to ease blending and reduce the work on the blender machine. I hope all this answers your question. Just to let you know what i observed in my Akara preparations because i know you love feed backs. Before i watched your video when i prepared Akara, and put the surplus in the fridge it becomes very hard, when i microwave it , it still remain hard. Say i prepare 12 Akara, i can only eat 4 at a time. After watching your video and used the SUPER HAND MIXER, when i fried 15 Akara, the remaining 12 can be put in the fridge and its still soft and fluffy for up to 3 days. Thank you.
Hey Kaye thanks so much for the feedback. Oh you know me too well. I thrive on feedback cos I learn from them as well. You are right on the money. My akara stores perfectly well in the refrigerator and once I heat it up( which I don’t sometimes as I like it cold too when paired with soaking garri😉) . Off course the crisp exterior will be lost cos moisture will occur but it will not be hard it will be fluffy and soft. Thanks once more for your insight.

You can still make akara that is edible and nice but in all honesty you will be sacrificing some of that nice shaped fluffy akara compared to if you whipped some air into your batter

I just finished eating my akara which I made using your recipe. This is my 2nd attempt and I nailed it! My 1st attempt was about 8yrs ago and it was a mess! Since then, I haven't been confident to try it again. To be honest, I was going to make this last weekend using another recipe I saw on RU-vid, but instead I made moimoi, and moved the akara to this weekend. God probably wanted me to find this recipe...lol. I watched the video multiple times all through the night and went through so many comments. I find that some nuggets can always be found in the comments when people ask questions. So, thank you so much for this recipe. My husband said it was better than the type we buy outside and that it was not oily. I was soooooo happy! But I have now been sentenced to making akara every weekend. So help me God! i will recommend added it before beating air into it or during blending the beans. You do not want to add it after incorporating the air so that you do not risk deflating the air already added... Whisking will require you to do a lot of arm exercise to achieve the fluffiness the mixer will give.
Veeluvstocook_ I tried your method a few days ago and it was superb👍 Although I used a whisk and not a mixer , it still came out well. The idea of incorporating air into the mixture really made it fluffy on the inside. Thanks for sharing your recipe!

Hi this is my first time making this- it may seem like a stupid question but how come my batter is kind of clumpy ?????? If it because my blender is not powerful enough ?? I usually see high grade food processors in most cooking videos , and end up frustrated cause my batter is never the consistency of the cooks batter ... How can i save the batter .. I tried adding a little water and blending again for a while but it was more or less the same result
Hi Dora. First off, no question is stupid on my channel so feel free to ask me questions as you have them. To better understand the challenge you are having, when you say clumpy do you mean it is still grainy as if the beam is not thoroughly blended?
Ok. Got you! Well the strength of the blender can be a culprit . However to make your blender more efficient in handling the beans it is imperative you thoroughly hydrate your dry beans. Did you soak your beans prior to blending? If no, adding water during blending will not help you because that way the friction between the beans and the blender blade is reduced. It will only be making your batter runny which will not even give you a thick batter required for akara. Have you seen my moi moi video? If no, try and watch how I blended the beans in the video . I share some more explanation right there between batter for akara and moi moi. Thanks

Tasted for the 1st time yesterday at International Food dishes for Black History month. It was the best. We learned that the Akara is blacked peas so every time someone asked what the dish was , they were told blackeyed peas, they were amazed and just had to try it. Pleasantly surprised!

Hey chiamaka. I will dare to say you can use a ratio of 1part water to 2 part flour (tip: use same cup to measure water and also flour).. but the end of the day, my greatest tip is to mix in the liguid bit by bit till you get the thickness you see in the video after blending the beans before whipping in air with the hand mixer. There is nothing wrong i peeling with the roof processor😊. I am making a small batch and believe it is a waste of time to use my food processor to do it. My food processor is the cuisinart 14 cup processor. You can use any other processor capable of doing the job. The tool is called a hand mixer. It is like a stand mixer but this is handheld and portable...

Thanks for your feedback and suggestion. Are you talking about skipping the mixing part with the handmixer to incorporate air? If yes, I have tried your suggestion in the past and for me this air incorporation and making the batter not too thin is the key. If you try this method (if you haven't yet, you will discover that you ABSOLUTELY need no egg cos it is so so so fluffy. But again, cooking is a form of act and we are all free to Express ourselves in different forms so feel free to add it to yours Thanks for your suggestion 😊

Thanks. You can stir with your hand but that will be one heck of arm exercise. You will still have a good akara but thought out my experiences,whipping considerable amount of air is one of the major key to getting that super extra fluffiness
