What better way to learn how to make Parsi style scrambled eggs than from a Parsi chef. Take a look at the ever smiling, Chef Kayzad's recipe to make Akuri.
AKURI
Ingredients
4 eggs
2 teaspoons oil
1 medium onion, finely chopped
1-2 green chillies, finely chopped
1 medium tomato, finely chopped
1 tablespoon + 1 teaspoon chopped fresh coriander leaves
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
½ teaspoon cumin powder
Salt to taste
1 tablespoon butter
4 bread toasts
Method
1. Heat oil in a non-stick pan. Add onion and green chillies and sauté till onion turns golden.
2. Add tomato and sauté for 1 minute. Add 1 tablespoon coriander leaves and sauté for 30 seconds.
3. Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.
4. Beat eggs in a bowl, add to pan along with salt and mix lightly for 1 minute. Add butter and remaining coriander leaves and mix well.
5. Cut bread toasts into triangles.
6. Garnish with a coriander sprig and serve hot with toast triangles.

This is not akoori lol. Another disappointing recipe from this channel. It has gone to the dogs in terms of recipes and quality. This is as bad as when this channel showed a recipe of Methi Matar Malai without real methi 😂😂😂

I am a blue blooded bawaji. You are making Burji not akoori. Even the street cart vendor can make better Burji than you did on RU-vid. Take my opinion. The onions must not be cooked beyond transparent, Ginger garlic and coriander leaves must go in with onions. Add tomatoes when onions are fully transparent. Cook tomatoes on slow flame. They must heat up but not disintegrate into pulp separating the skin. Then you let that cool to room temperature. At room temperature you add your eggs and follow the same procedure as scrambled eggs. Very slow flame add salt pepper to taste. And the eggs must be loose and runny. Redeem you reputation and redo the whole thing.
