The meat of these large sea snails are quite tough unless tenderized. Place the snail into sea water, wait for the snail animal to emerge from the shell and quickly put a big game fish hook into foot and hang the shell upside down. Snail will retract into shell but be patient. The snail will get tired by the weight of the shell and will stretch the foot (edible part) thus tenderize at same time. When snail cannot retract back into shell its ready to prepare.
Both dishes look absolutely fantastic, I'd try them in a heartbeat. Anyone who has the skill set of this man with a knife has my utmost respect. It took years of practice to have this level of mastery with a knife. Notice his nails are cut back to the quick so he can control the food with precision.
I jist love those chopsticks! I love the really fine tips and the color. It adds to the visual appeal of the food whereas the other more common light colored coarser chopsticks just seem to detract for some reason.
I'm not sure how I got here but it's 3:15 on a Sunday and I'm just watching people make some interesting dishes from sea creatures I'm impressed at those knife skills tho I wouldn't trust my self letting a knife go that close to my fingers
