We made keto chocolate chip cookies, ice cream, and coffee all with Allulose - a rare sugar that naturally occurs in small quantities in fruits like figs and raisins, and also in wheat and corn. We couldn't tell the difference in taste! Allulose is just about as sweet as sugar, and it also behaves like sugar. Allulose can be used in a 1 to 1 ratio just like sugar for drinks, baking, ice cream, cooking and more.
But how is sweetness AND zero calories possible? Allulose is a monosaccharide. Allulose isn’t metabolized by the body - it's absorbed by the small intestine, and then excreted. None of the calories get absorbed or stored in your body. Since the sweetener has an extremely low sugar content, people on “keto” diets are using allulose more. The FDA states that allulose is “generally recognized as safe” (GRAS).
