Amaranth Green Thogayal/Thokku (excellent for school & office tiffins)
Amaranth Green Thogayal/Thokku is a thicker chutney prepared it has coarse texture
Simple yet tastes super delicious
dry dish made with green amaranth leaves, green spinach leaves, seasoned and blended with onion, coconut, tamarind it’s
a healthy dish that can be paired with kanji/steamed rice or served as a side dish with dal rice, paratha, Roti.
It’s spicy, tangy and so delicious can’t stop eating ….
Submerge the greens in the water
With fru wash solution for 5 minutes, You can also add a splash of vinegar & salt
Wash thoroughly
After washing, remove the greens from the water and rinse them under running water to ensure all dirt and cleaning agents are removed
-1/2 bunch Amaranth leaves
-3-4 spinach leaves
-1/2 onion chopped
-2 green chillies
-1/2 cup fresh coconut
-1 tbsp Vad Pav Dry chutney mixture
Seasoning
-1 tsp mustard seeds
-2 green chilled
-1 tbsp urad dal
-1/1 tsp cumin
-1/2 tsp fennel
-1 spring curry leaves
-Small piece tamarin
-2 tbsp oil
-Heat oil add add mustard allow to pop, cumin,urad dal, fennel seeds, green chillies, curry leaves
-add Green cut leaves ( spinach & Amaranth ), add onion stir and cook until leaves are completely cooked
-Remove from the heat allow them to cool completely
-Transfer to chutney grinder, add fresh coconut, vada pav dry chutney mix, tamarind and blend without water grind and make it into a thick chutney
-Remove, add ghee and shape it into a small tennis size ball
-Enjoy with kanji/dal/rice/roti/paratha/papad.
