Red shen choy or Amaranth leaves - 1 bunch (about 500gm)
Onion - 1 medium( chopped)
Dried Red chilli - 1 (broken)
Chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Mustard seeds - 1/2tsp
Urad dal - 1tsp
Curry leaves - Few
Salt to taste
Jaggery or sugar - 1tsp
Fresh shredded coconut - 1/4 cup or more
Oil - 2 tsp
Water - 1 to 2 tbsp (use only if leaves are dry from moisture)
