Laal Saag with Chana dal bhaji recipe purely village style. This is a simple and healthy Goan preparation of a dry dish made with red amaranth leaves or red spinach leaves with chana dal and lots of garlic cloves. It makes for a healthy veggie dish that can be paired with roti or paratha or steamed rice or served as a side dish with dal rice.
This one dish used to feature in our menu back home. Then and even now I am fond of this garlic, chana dal with fresh red amaranth recipe. I can just have this sauteed amaranth leaves with plain steamed rice or chapatis. This also would be my tiffin box lunch with some chapatis

Ingredients for Laal Saag with Chana Daal (for 3-4 servings )
Lal Saag/ Red Amaranth Leaves - 300 gms
Chana Dal - 1/2 cup soaked overnight
Mustard Oil - 2-3 tbsp
Jeera - 1 tsp
Methi Dana - 1/2 tsp
Whole Red Chilli - 4-5
Garlic cloves - 2 whole garlic medium size
Haldi powder - 1/4 tsp
Salt according to taste
