Save that parmesan rind and use it when you make minestrone soup or any kind of soup actually. Cook the rind in the broth and then take it out later and you will have an amazing flavor.

Yesterday I hopped on the escalator and I peered into the store beneath me. I saw a book signing and was like “cute” then the book closed and I saw that IT WAS YOU AND YOU WERE SIGNING A fans book. I was shocked. Wish I had a copy of your book to let you sign! ❤️❤️❤️

Id like to "thank you" for the tips you gave on "patting ,folding and cutting" your biscuit dough! I've been baking biscuits for 40years but this method has definitely taken my biscuits to new heights! great tips!

I made these biscuits and they are absolutely delicious! I had European butter and fresh chives, but no parmesan. I substituted Gruyère cheese and they were so good.

I haven't had biscuits in maybe 16 years. When we were in California, we had em at least once a week. I saw the photo & the taste buds started screaming, for that warm buttery flavor.

Buy. This. Book. Buy it now! What wonderful recipes. Last night I made the chicken pot pie, but didn't have time to make the biscuits, too. Luckily there is enough pot pie leftover for dinner tonight (since there are only 2 of us), so I'll be making the biscuits to go with. I save the rind from the parmesan to throw into the pot of pasta water to infuse the flavor into the pasta as it cooks. I freeze and then grate my butter for pie crusts and biscuits.

Never bought a cookbook before, but I made sure I purchased yours! I love how you separated the recipes into different seasons and used the appropriate harvest for the season. My Mom used to be a cook for a church, lately, she's been enjoying "my" recipes, but she doesn't know my secret ingredient is you!

Question: I’m from (what used to be in Europe) England, and I’ve never HEARD of “European style butter”, anywhere. Ever. We have salted and unsalted butter. Can I get some more detail on it please? Is our butter different from yours somehow?

American butter tends to have more milk remaining in it than the butter we get over here. I'm not sure if it's salted or not, but I assume unsalted considering the amount he added to the mix on top of the salty cheese. So while American butter only has to be 80% fat, European butter tends to be at least 82% and sometimes as much as 90%, and ours are often churned for longer. He should definitely clarify if he means salted or unsalted, though.

Thank you for this recipe John, I’m about to make it now. I’m in Australia and we eat scone which are the same as biscuits without the lamination though. First time making biscuits so fingers crossed! I make a good scone hopefully that will bode well for me with biscuits.

You can take the parmesan rind, cut them into small pieces and bake them in the oven. They puff and pop like popcorn. A great treat for children and adults alike.

I can’t wait to try these! Being in Australia we only ever eat the traditional scone but I striped your sage biscuits and everyone loved them!! I did find they are best the first hour out of the oven, definitely not a make ahead snack for us but if anyone has any storage tips I would love to hear them!

I think I would cut the biscuits into squares! Then I don’t have to mash the scraps together and the layers would be retained as initially intended.
