I genuinely hope the best for this guy and his restaurant, nice to see someone passionate about their food and trying to be creative versus a lot of modern restaurants that sells out instead of making (please punch me) cuisine even though profit is low

Lincoln square is better. I go there for the best waffles in the world and fresh squeezed OJ. I avoid pretentious woke restaurants .

I like seeing rifts on flavors I grew up with, like chicken liver and zucchini bread. Flavors that remind me of Mid-west pot-lucks, and here's a chef that's not sneering at flavors I love, but incorporating them. Thanks for sharing Eater!

A restaurant owner concerned about high food cost and high labor cost? That's unheard of! (seriously, you have to wish some sort of cash windfall onto folks who are doing the work like Brooks is)

wordkyle well no shit. The restaraunt business is brutal. You have to think about the amount of money that goes into each meal and then any time a chef makes a mistake or the customer doesn't like it or whatever and sends it back that's money down the drain and to top it all off you can't overcharge or nobody will buy it. A 12 dollar cheeseburger involves 3 or 4 dollars in ingredients, a chef being paif 12-15 an hour. The dishwashers 10 dollars an hour. The prep cooks 10 dollars an hour. The gas bill. The electric bill. You don't end up with very much profit. We're talking pennies on the dollar most places. The only places making bank are the places like the fat duck or noma with 160 dollar per person just to sit down. But those are places you visit once in a lifetime

I agree with everything apart from the last line. The Fat Duck has never made any real profit (tv work often paid for it to continue because of high r&d costs) and Noma has had many close calls. Even with multiple chefs on stages the average 3 star still has 2-3 staff per diner for any service so you can imagine how fine the line is.

Better waffles at Lincoln Square. Plus they have multiple locations and parking lots. You'll save 1/2 and get better food.

That line about modifications are declined basically means if anyone has a food allergy, they're taking a very big risk. Several people in my family have severe/deadly food allergies to a number of foods. For a lot of people, "modifications" aren't about being a picky eater who should just trust them to make a good meal. It's about life and death. The management's failure to comprehend that with their remark in the menu is a major red flag to me.

Haven't encountered breakfast as a leftovers+scraps meal in any establishment. I also would like to note that cooking, in general, is 10x easier if you have no reservations about butter usage (imo).

I ate at Milktooth once and the food was great but a person without lots of money couldn’t eat there a lot. Since only 4.5% of Americans make over 200,000 dollars while paying 8 or less in taxes and the other 95.5% of people are making what they made in the 1990s and paying 18.5% in taxes. Milktooth has stayed in business because they’re close to Eli Lilly and downtown Indy other areas they might not have done so well.

Im from Indiana, closer to Chicago than Nap, she doesn't speak for all Hoosiers. Every region is different. You'll be able to tell by a travel across 90 or down 65. Good experimental food though. Never know if it's good if, you don't try it. Will be in nap in the spring

The BEST breakfast food, by far, is at Polly's Pancake Parlour in Sugar Hill, New Hampshire. Hands down!!! I've traveled extensively and I've had some amazing food but Polly's is incredible!! You HAVE to try their pancakes!!!Everything is made from scratch, farm to table, fresh food!!!! Trust me, even though you don't know me 😀👍

Went to it a few days ago. The place was cool, and the food was very unique and very good. However, it was WAY too expensive for brunch. I was the only one in my party, and my bill came up to be $40 for coffee, and 2 items before the tip, AND they forced a 15% gratuity. I would have given the server 20% tip, but because the 15% was forced, it was a complete turn off. The price of the food and the forced gratuity are enough that I won't go there again. But glad that the concept of the food is working out well for them. The place was packed so they're obviously doing very, very well.

As someone who unfortunately lives in Indy, they are usually surprisingly busy. I attribute it to the lack of diversity in places to eat and people being curious for new things. The city is far from hipster, but is slowly leaning toward it. Downtown is always empty and is covered in parking lots that are never full (there are probably more parking lots that low/high-rises). Outside of downtown Indy, there is literally nothing to do except go shopping at the Fashion Mall, their upscale mall that lacks upscale stores, or go to a movie theater. Indianapolis is not for young people, it is for older people or families, that is it.

Not just young chefs; many, many chefs in general sport Ink, old guard and new. I think it's part of Chef Culture. And it doesn't affect the taste or safety of any dishes, so no one needs to worry.

Chef, outstanding food & recipes, wild hairdo, but who Am I to say, mine is very long in a pony tail usually & everybody asks me when am I going to cut it & I say when I can braid it with my ass crack hair, lol, but then only enough to where they will meet & can be braided together again, lol, my wife loves it, will visit there soon, I am a Kentucky hillbilly & not 2nd generation, only appx. 2-3 hours away

He has a profit margin. The staff and rent get paid, and he can make it up on volume. Not every restaurant need a 300% markup.

Ex Queue Regardless of the intentions, a business has to be profitable. Hearing a business owner say the “profit margins are pretty slim” doesn’t give me a warm and fuzzy. Good food doesn’t equal good business sense. I don’t want them to fail but if they can’t get their stuff together, the staff will have to look for other employment.

Ugh! You have to deal with woke Fountain Square and double the price of the REAL best breakfast joint in town. That would be Lincoln Square. Family local owned with several locations around town. Not woke, friendly and welcoming to all. Milk tooth is over rated.
