If you're talking about the fact you need to be invited by someone who has been there, It's not pretentous. They're not excluding anyone. It's more like you need to be shown where it is because most of these places have on signage and hidden down some ally-way. There are heaps of little bars and restaurants like that in Japan but if you do rock up at their door they won't turn you away.

The thing I like so much about this episode is that they left with a new understanding in food, and were so clearly overjoyed by that. Brent's reaction to the last steak is so wholesome, just such a wholesome episode.

I was about to comment the same thing! Such a heartwarming level of respect that was shown to the young chef. Being able to set your pride down and allow yourself to learn something new every day, even if you think you already know it.. is such a show of class and professionalism and there are way too many people who don't have that in them.

I can relate to the people not liking raw meat. I was one of them. However, my taste changed radically when I first visited Japan. If you taste this kind of meat, in Kobe let's say, it will change your world... Tartar is still a challenge for me if the beef is not of supreme quality. I can't hear anyone complaining for sushi though. And raw fish is far more dangerous from raw beef. Adapt and try new experiences guys. For sure it will not kill anyone if the quality and the preparation is such...

im gona correct you there now if we are talking about raw fish for SUSHI then no, it is WAY safer to eat it raw than meat. Now eating raw fish that is not sushi grade (lets say just out of a lake) then it is very dangerous but then again who really does this. So there you go yes fish is technically more unsafe to eat, but that's usually not sushi grade and no one really eats raw fish that isn't meant for sushi (at least not supposed to). As for the beef i mean there's plenty of e-coli going around so i would also have to get that "sushi" graded very easy to do aswell

@@joseaguirre9389 yeah sushi grade is safe, but it's easier in general for pathogens to get into fish. Beef is so dense that pathogens can't get into the inside of it. And the outside, as long as you get your meet from good places, will be clean. Sushi grade fish have to meet insane standards that beef does not have to meet to be safe to eat.

Raw fish is frozen to a temperature that kills the parasites and bacteria. It's ok to be smart just did a video about this. So sushi is not exactly like taking a fish out of the water cleaning and eating it raw.

I saw someone comment once on one of these eater/behind the restaurant scene videos and it went something like this "Notice how he isn't scared of sharing his entire recipe and all his tips because he knows that it takes years of practice and hard work to even be able to come close to replicating what he's doing"

Nice job from the hosts allowing the chef to talk when he wants. Many hosts are consumed with what they want to say and not realizing viewers want to get the information from the person making the food. Also I noticed the chef had braces, I hope he didn't just have an adjustment because that can make eating quite the pain. The food quality here is just next level. I would love to have had all that food to myself

The “have to know someone” rule is very loose. Pretty much anyone can get in here, it’s more to give an appearance of exclusivity, I’ve been here btw. Sushi Saito in Tokyo has a rule similar to this but it actually is nearly impossible to get into. Also the “super rare” washugyu is American angus cross bread with wagyu. There’s plenty of joints around that sell pure bred wagyu. Including bohemian I think since they are behind JPB shop.

To me is really ridiculous to hear that in grass fed cows "you can actually taste grass". Really pretentious comment to show off how much he "understands" beef. Where Im from 80% of the cows are grass fed and nobody can "taste grass" (which is bitter for god's sake!).

I've worked in restaurants for 20 years, and the first time I saw chefs encounter 100% grass fed beef was some expensive piedmontese beef we'd imported for the menu. We didn't continue to import it because the flavor was objectionable. Most grass fed beef is finished for six months on corn to get the flavor that americans are comfortable with. That's why finishing lots are big business. 100% grass fed beef definitely tastes grassy. Almost any animal fed on a unique diet will taste unique. There's a guy in santa cruz who raises abalone and is completely batshit crazy about getting their diet right to promote a certain flavor. if you're eating grass fed beef and not tasting grass, it's because the beef was finished on corn, or you're not paying close enough attention.

Ryan Taylor I understand and accept that when someone is saying that "you can taste the grass" it may not be in a literal sense. Of course I do. What they are saying is that there is a big difference. If Im right assuming that, you shouldnt be able to ACTUALLY TASTE THE GRASS. The difference between feed lot and grass fed in terms of flavor is huge, and I sure can taste it. My objection is that you really cant taste the grass... you simply cant. Its like assuming that because you feed your chicken with spiced up corn they are going to taste spicy (which they are not, obviously). I work in the restaurant industry too, Im a chef same as you are and as I was born and raised in Argentina, believe me, I do eat quite a lot of beef; 5 times a week actually, and Im very responsable and aware of the sourcing so... If its said in a figurative way, Im a 100% with you. But in a literal way... cmon! Im not saying that what the animal eats doesnt translate in its flavor, Im just saying its not math.

Many sweet animals are dying for people's food. If you are in an affluent society you have no excuse why to eat animals. They suffer unbelievable. Many who go to slaughter aren't feeling good. They have scouts down their legs, pink eye, blood, sometimes broken legs and hips. Many cry tears and scream while waiting. Some are just a few days old. Some are so elderly they have no teeth and their bones jut out their skin. Some are blind. Please don't eat them. It's so credibly sad.

Secret restaurant concepts are cool when done right. Isn't this particular eateries concept they that went with -A legal speakeasy -by saying they wanted to have only friends know of the place and their friends only bring their friends. Basically the equivalent of, charging your friends (and their friends) to eat food at your place? Yo, the Amazon has enough problems. Don't try to gentrify it so quickly. For real. Usually refrain from these type of comments. My fault. This was whack though. I've watched videos of people dropping bouncy balls things onto a hot frying pan and that had more merrit. American beef is fricking fantastic. It really is. So is beef from Alberra Calgary. Let's leave the real Wagyu to the fine hardworking cattlemen in Australia and Japan though.
