We sent the very special Andy Barghani to BCD Tofu House in New York's Koreatown to learn all about Korean cuisine. Joined by the erudite Susan Kim, Andy tastes his way through BCD Tofu House's menu and then learns how to make some Korean staples, including seafood pajeon (scallion pancakes) and seafood soon tofu.

If you don't know what I'm talking about, there was a scandal with Bon Appetite and several people left Bon Appetite as a result so no more of Claire Saffitz suffering or struggling to remake common food items and other chefs who left.

This series pre-dates the pandemic and the BA blow up and it was doing some important things that have now become relevant - highlighting local restaurants run by chefs of color. So good for Andy for doing it before it was cool.

As far as ice cubes in cuisine, growing up with an Italian background, summer is not complete without a tomato salad with ice cubes. Tomatoes, garlic, fresh basil, a good olive oil and frozen water. Dash of dried oregano and you have my favorite dish of all time.

Ugh I love seening non Koreans truly enjoying authentic Korean food. Also, I don't know if it's been mentioned, but BCD Tofu is open 24 hours!!! Amazing hangover AND drunk food.

@@whiskeyandsarcasm I actually haven't been too honey pig though I've heard good things- there's a little cluster of korean places in station north around north ave and charles- people really like Jong kak for the bbq, nam kang for the atmosphere, and I haven't been yet but a korean lady who owns a dive bar said beone is her personal fav. I don't think I saw Tteokboki on any of their menus tho!

This is such an informative series, and I have watched all of them, including the Chinese cooking, Indian, Thai, Middle Eastern, and now Korean. One thing that we didn't get in this video was a discussion of the specific spices used in the cooking. This was a feature of the previous videos. Every ethnic cuisine exists somewhere in the five boroughs, so I hope there are going to be many more of these episodes.

korean cooking actually doesn't use a huge array of spices. (mine don't anyways) a lot of gochugaru and gochujang, seasame oil, soy sauce, garlic, etc.

Middle eastern cuisine is not one single one..very different food and way of cooking. It's like saying east asian or european cuisine.

Bone broths are always very satisfying to the body. I make my own all the time, combining different bones sometimes. When you eat good, whole food the body is satisfied and does not go looking for junk to eat.
