The reason that Ed thought the armor was deactivated when he took the head off is because you can only control the part with the blood seal and the stuff connected to it. The reason Al can take off his head without issue is that his blood seal is in the body of the armor

Envy is their name, alchemy has been around for a long time but Ed is 15 so something he comes(or anyone else) up with may have been used before and if you're a shady government then you don't want that to get out

Found your channel yesterday and binged the other FMAB reactions. I've been watching anime for close to 25 years at this point and love seeing people taking their first steps into this new world. I've got a few recommendations for you. Name (Total number of ep) Year Cowboy Bebop (26) 1998 Samurai Champloo (26) 2004-2005 *Mobile Suit Gundam 00 (50) s1: 2007-2008 s2: 2008-2009 Mobile Suit Gundam: The Witch from Mercury (24) s1: 2022-2023 s2: 2023 Yu Yu Hakusho (112) 1992-1995 *Mobile Suit Gundam has a few different series some are attached to a main time line some are stand alone series (Any Gundam I mention here are stand alone)
