Could we maybe do two versions, going forward? In one, make the best sausage possible given the ingredients, but with the other, continue throwing everything into the grinder? Part of the novelty is to have everything put into the grinder, I think, and that would be lost if certain ingredients were not put into the grinder.

I think you're right: no more extra bread going forward. The fries made sense since they've got additional flavor, but the sandwich buns going into the sausage mix seems like a moot point when you're putting that sausage inside a hotdog bun. At that point it's just double the breading, saps the flavor and leads to bursting. Still love you, papa.
Bread is okay as a binder, but most pros soak it so it swells before it goes in. But I agree that less would help. I also dry mine at least 24 hours before cooking and that helps a lot.
Love coming back to these old ones to compare how his voice sounds. Newer episodes sound like he’s going crazy. But here it sounds like he’s just depressed
