Baking may not be everyone, but for those who love it, it's an invitation to try delicious things. In this episode, we've brought in Phaedra, who was born in Bermuda, and Amy who comes from a long line of Mennonites. As the two swap recipes for Bermudian Hot Cross Buns and a Mennonite Butterscotch Pie, they expand their recipe repertoires and cultural understanding, one cup of flour at a time.

Thank you Beryl and Dom for your fantastic work on this video. I had such fun shooting this video with you here in Providence. I am delighted with the beautiful and intimate video you and Dom created. Congratulations to Phaedra for sticking with my Great Grandmother Anna's (via my Mom) pie recipe, I know it was a complex recipe to make in such a short time. You rocked it! For anyone interested, I can also be found here planning and demonstrating culturally diverse vegetarian recipes using produce boxes.

I was just able to share our video with my Mom, who has dementia. While she couldn't share her response, I could tell that our video, and my voice and images, held her attention. I had hoped this video would share her voice, and a part of her story now that she can no longer do so herself.

Okay when you first mentioned the fish cakes in the hot cross bun I was like whaaaaaa?? But then I had this intense flashback to me like 10 years ago making sandwiches with hot cross buns and crumbed chicken patties. I totally forgot about that and how much I loved that sandwich

I got mad at the price of bread in October '22 and started baking my own. I've baked a loaf of bread a week for almost 10 months and the bread has always been edible if inconsistent. It's an adventure. Yeast is amazing.

I've always loved baking and started helping mom with cooking when I was 3. I read moms 1950s Betty Crocker cookbook for fun and would pick recipes to make. I was the first in our family to make shortbread and English toffee and Mennonite lemon pie and Spritz cookies and...well, you get the idea.

I wish this series was on pbs when my grandma was still around. We loved watching food on pbs and this would’ve mixed my new age RU-vid with it. She’s didn’t have internet and didn’t care about having it….. she hated how phones took away from the family. I always tried to show her that I was just trying to learn more food stuff!!! Hopefully she can see how it’s mixing now! ❤️

I absolutely love baking - when I don't fell rushed or pressured. It's definitely a relaxation time for me, and the heavenly smell from the oven and my drooling (heheheh) husband make it all worthwhile.

My mom was a baker and taught us all how to bake and let us bake on our own from the time we were pretty young, like 8 years old. I love to bake , especially pies and bread.

I love baking! Think this was my favourite episode so far :) The joy and care that went into the making of these dishes was just touching! Inspired to ask my friends with different cultural backgrounds now what baked goods they grew up with and try making it with them :)

These are both recipes I would be hesitant to make without some help, there were very advanced skill wise! Good for us to all see the joy of making something important to other cultures.

I am reasonably okay with baking, though the most complex thing I have baked on my own is scones (Americans can think of biscuits, as I consider them cousin recipes). Pie dough is not something I have tried (relying on store-bought pie shells), nor is yeasted bread, with most of my experience being in cookies and cakes. In fact my first experiences in baking, when I was a kid of 9-11, was biscuits (cookies), with cakes coming a little later. My most recent baking experiment was trying to make a boiled fruitcake with no dried grapes in it - it turned out fine, if a little crumbly because of too much butter, which I rescued by turning into an egg pudding... but none of us have been really eager for it, so I think it is going to have be disposed of. That is just a lack of interest in fruitcake though.

I love baking and do it professionally. I love watching people try their hand at baking new things. Even for me there are trials and tribulations in almost every recipe. But I think that’s where the fun comes in. Every single time you make something, even if it’s the same thing again and again, there are always opportunities for learning and improvement!

If you gently roll the pie dough up on the rolling pin you can place it over the edge of you dish and unroll it giving it enough slack to sink into the dish. I have less tearing when I transfer the dough this way. I sure have enjoyed the pan pal series and hope there will be more seasons to come!

I find baking stressful, as you can't taste as you make it (I tend to melt and assemble). I love cooking though. This is such a great series, both of these ladies were just wonderful, and so open to trying something so different to what they're used to.

Love these series! Having a medical background I kept wondering what the reason is for Amy’s eyepatch though… Pan Pals is just a wonderful series and I hope there will be following seasons just because there is soooo much good food to share in our world and it’s been said here many times we should connect through the things we share to learn and understand about our differences so we can one day love and appreciate them ❤️🥰

I love to bake! There are some things I’m not great at, but I’m a perfectionist in so many other parts of my life and baking (and cooking too, actually) has really helped me see that even if it’s not perfect it will probably be delicious.

I absolutly love baking, to be fair, I usually keep it simple, ashcakes, simple batter cakes where I try to gett away with adding as much vegetable as possible, lemon bars, macarons d'amiens, low effort high reword stuff. It is therapeutic and since I have more food tolerances then should be legal, it is pretty much the only way for me to get something sweets beside just eating fruit.

@@amandalloyd8812 Hihihi, I do have a thing for a bit obscure traditional recipes over the very commen modern ones, since I can not have gluten that's often easyer and more interesting. Just sweet never cuts it for me. ashcakes come from the British islands, there are very old and there are tons of variations of them, but they are always made from oats. Traditional they would have been baked in the ashes of your fire, the newer skillful preparation would be in a skills, where you also get some charring, but they are very prone to breaking so I most often bake them in the oven. My recipe consists out of oats, honey and ghee since I can not have butter and barberris. Barberries are very much not traditional, buts a dried fruit I always have at hands and with the honey the ashcakes are sweet enough that I do not feel the need to add to that, but you could so apples raisins or which ever strikes your fancy. Tasting history has a great video on the topic but looking it up you should be able to find tons or recipes and articles. Macarons d'amiens are like other macarons made from eggs and ground almonds but originate from a different region of France and are way simpler in preparation. Ground almonds, sugar, honey, some smooth apricot or other light colored jam or fruitbutter, egg whites. In contrast to other similar recipes, the egg whites do not get beaten fluffy, the dough feels like wet paste of almonds and usually gets rested for about 8 hours, but one also can bake them imidietly and does not lose that much. Before they are baked you use one of the left over egg yolks to give them a wash with it and then bake them golden. They are very delightful, somewhat crispy on the outside, light and airy in the inside despite not having have beaten the egg and the core is very soft and moist if you have not over baked them. There are also several variations out on the Internet for them, some add bitter almond extract. Falling into the same category would be beju, traditional Nigerian cookies made from freshly grated coconut and cassava as well as some sugar and I like to add a bit of ginger.

I love to bake more than any other type of cooking . My mom baked all our family's bread, cookies and cakes. Some of my favorite childhood memories are baking with my mom and eating warm baked goods fresh from the oven.

For the pie crust: always use wax paper. If you roll it between wax paper with flour, it makes picking it up easier.

I can not have a lot of things people would see as essential in baking, but one can switch out a lot and I have a very curious best friend that is willing to try and encouraging me to make weird stuff anyway and I got her hooked on red beet chocolate cake. It is absolutly glorious even when made vegan and glutenfree and with the questionable adition of the beet. I made it with very little sugar to and she gobbled it up and it made me extreamly happy ^^ if I readjusted the sugar to normal taste no one would notice anything off about it ^^

When Lisa said 'basil' wrong, it was hilarious,as she said it the way Australians say it, so it sounded normal to me. The American pronunciation of 'basil' is weird to me.

Baking is a decompression for me. Very therapeutic. It's not like cooking where you have to rush around. You can take your time. Things are done when they're done.
