I started having avocado and vegemite on toast nearly 20 years ago and people thought I was nuts, funny how things change over time... Btw, avo and vegemite on toast, maybe with a touch of black pepper is all you need! I'll occasionally throw a poached egg or two on top for weekends but that's it :) All those other versions were way too much, don't overcomplicate a beautifully simple thing people.

Whatever toast you want, sourdough is my favourite though with avocado that has lemon, salt, pepper pretty well mashed but not just soup. Mushrooms, sliced and fried in butter, salt, pepper. Perfectly poached egg. Salt pepper. Served as is or with hot sauce, my preference is cholula hot sauce.

How to make the ultimate decadent smashed avo: - Start with a sesame seed bagel or some thick, buttered sourdough toast. Don't use thin stuff that turns into a rock hard toasted slab. - Add avo smashed with creamy feta, a little olive oil, salt and pepper. Home made pesto is optional but don't even think about the jar stuff. - Add spinach for sweet greens, baby rocket for bitterness, a drizzle of lemon/lime for some acidity. - Top with an egg poached in vinegar water for some rich protein that doesn't overpower the avocado. - Finally, drizzle some sweet balsamic dressing, sprinkle sesame seeds and serve with a thin slice of lemon/lime. Chilli and cherry tomato draw away from the soft rich flavour of the avo. Let's face it, you're only adding it because it's red!

Sohan and Ryan’s were my favorites, but Tom’s is a great choice if you don’t have a lot of time in the morning. My favorite breakfast is lox, cream cheese, onion, and caper on a freshly baked bagel.

Look, in Canada where we can’t just walk out in the backyard and pick a ripe avocado off a tree, they’re a bit expensive and a treat. I’d say keep it on the simple side. I do a toasted potato bread with butter, smashed avocado dressed with lime or lemon, salt and pepper. I might add tomato but that’s it
