1 kg mutton nalli (shanks)
2 large onions, thinly sliced
2 tbsp ginger-garlic paste
1 cup yogurt
4 tbsp nihari masala
1 tsp turmeric powder
1 tsp red chili powder
1/2 cup ghee or oil
4 cups water
Salt to taste
Fresh coriander leaves for garnish
Ginger julienne for garnish
Lemon wedges for serving
Instructions:
Heat ghee or oil in a large pot over medium heat. Add sliced onions and sauté until golden brown.
Add ginger-garlic paste and cook for a couple of minutes until aromatic.
Add mutton nalli pieces and sear them until browned on all sides.
Sprinkle turmeric powder, red chili powder, and nihari masala over the meat. Mix well to coat the meat evenly.
Pour in yogurt and stir continuously to mix well with the spices.
Add 4 cups of water and salt to taste. Stir well to combine.
Cover the pot and simmer over low heat for 2-3 hours, stirring occasionally, until the meat is tender and the gravy thickens.
Once cooked, garnish with fresh coriander leaves, ginger julienne, and lemon wedges.
Serve hot with naan or steamed rice.
