Cha Ca La Vong, also known as Hanoi Fried Fish with Turmeric and Dill, is a tantalizing combination of crispy fish, aromatic herbs, and savory dipping sauce. 🐟 Ingredients:
1-½ lbs white fish fillets (Catfish and Snakehead are popular, but any firm white fish will do!)
½ teaspoon sea salt
1 tablespoon fish sauce
1 tablespoon granulated sugar
1 tablespoon turmeric powder
1 small knob of galangal or ginger
1 small knob of turmeric
3 cloves grated garlic
1 Tablespoon Greek yogurt
2 tablespoon minced shallots
Vegetable oil plus more for deep frying
2 tablespoons corn starch
1 bunch fresh dill
4 green onions (cut into 2-inch segments)
3 Shallots Sliced
1 small yellow onion (peeled and cut into slices)
1 Package Rice Vermicelli (cooked per package instructions)
Roasted salted peanuts
Nuoc Cham dipping sauce:
1/2 tablespoon sugar
1/2 cup water
1 tablespoon lime juice
1 tablespoon fish sauce
1/2 tablespoon minced garlic
1/2 tablespoon minced jalapenos
Instructions:
Prepare the Nuoc Cham dipping sauce by combining sugar, water, lime juice, fish sauce, minced garlic, and minced jalapenos. Stir until sugar dissolves.
Cut the fish fillets into 1-½ inch pieces and marinate with salt, fish sauce, sugar, turmeric powder, galangal, garlic, and shallots.
Heat vegetable oil in a skillet and fry the marinated fish until golden brown. Usually takes about 3-4 minutes on each side.
Once cooked add the onions, shallots, green onions, and dill and cook for a couple more minutes
Serve on top of the rice vermicelli, and add crushed peanuts and Nuoc Cham Sauce.
