This looks amazing! And perfect for fall. I think I would add some corn and vegan chorizo (I prefer the texture over regular chorizo so I always have some in the freezer)
Seems weird to boil the lasagna and then bake it so it hardens again. I feel it's better to make chips with corn/flour tortillas or just use store bought ones.
It also seems very time-consuming. Chips usually aren’t that expensive. Even at a minimum wage of $15/hour, the 20-30 minutes spent cooking the noodles, draining them, cutting them into neat triangles, roasting them, and then cleaning up the related cooking utensils comes to more than the cost of a generic bag of tortilla chips. (Especially when you factor in the cost of the noodles, about $2, and another 25 cents for oil, salt, energy, etc.)
I am vegan but many vegetarians eat eggs since no one had to die for it, many will eat cheese, milk, etc., also, even though there is immense suffering attached but no one directly killed for it. Commercial eggs are almost all non fertile they will never become a chicken in other words, ever.
