Baby squid is available in wet markets, suitable for making this squid salad.
Ingredients:
Baby squid
Vermicelli
Cherry tomatoes
Purple onion
Lime
Lemongrass
Thai chilli
Garlic
Palm sugar
Coriander
Fish sauce
Step 1
Dice lemongrass.
Step 2
Dice Thai chilli, smash garlic, add palm sugar and lemongrass then crush.
Step 3
Cut coriander, add to dressing and combine.
Step 4
Add fish sauce, lime juice and combine.
Step 5
Pour into a bottle. Add water, adjust taste.
Step 6
Clean baby squid, remove viscera and cut in half.
Step 7
Soak vermicelli and cut up with scissors slightly. Cut cherry tomatoes in halves, finely slice purple onion, and cut coriander.
Step 8
Cook vermicelli for 30 seconds and put aside, blanch baby squid.
Step 9
Mix vermicelli with some dressing, add all prepared ingredients, and then mix rest of the dressing.
