I like adding potatoes, good spring roll pastry is hard to find. Ah So got them in Wan Chai wet market, she says round is better than square shape.
Ingredients:
Spring roll pastry
Potato
Onion
Ground beef
Egg liquid
Dark soy sauce
Cornstarch
Salt
Sugar
Curry powder
Shaoxing wine
Chicken powder
Step 1
Steam potatoes till cooked, remove skin and mash. Finely chop onions.
Step 2
Marinate ground beef with dark soy sauce, cornstarch, salt, sugar, Shaoxing wine and Chicken powder.
Step 3
Fry onions in hot oil until golden brown, add a bit of salt and stir fry.
Step 4
Fry ground beef in hot oil until golden brown, add curry powder, Shaoxing wine, Chicken powder and salt, and stir well.
Step 5
Mix together mashed potatoes, ground beef and chopped onions; taste and adjust seasoning.
Step 6
Trim spring roll pastry to rectangle shape, wrap with filling to form samosa, use egg liquid to seal the end.
Step 7
Heat oil in wok, lower heat to fry samosa the first time.
