As a Jamaican, I am fascinated by Shanty and her beautiful cooking. Also, I was never a lover of Eggplant but this dish is one that I would love to try. I must admit, I'm addicted to Shanty's cooking 😍

Looks delicious, d only thing I would do differently is roast the onions ah little bit before putting it in d baigan. I find that when you roast onions it adds another level of sweetness to you food

Auntie shanty you cook just like my mom my mom used to make the same stuff just the way you make it ... All the things you make but now she passed so if I forgot what she taught me thanks to you.. I can look at your show.. and remember right down to the chulha my mom used to make that I used to help her make it and then we'd cook on it my mother is from background India so you remind me so much of her my mother love you Auntie shanty ❤❤❤🇨🇦🇨🇦🇨🇦🇨🇦
