These must-try baked bean pot pies are a favorite! They are easy to make and are the perfect cozy dinner recipe for fall and winter. These mini baked bean pot pies are also ideal to refrigerate and pull out for a quick and hearty lunch during the week.

RECIPE:
Baked Beans Pot Pies
Ingredients:
1 package (14 oz) Elkrich beef sausage - only use one sausage in the recipe
1 can (28oz) baked beans
1/4 cup BBQ sauce
2 tablespoons butter
3/4 cup Colby cheese, shredded
1 box Dolly Parton Sweet Cornbread mix & ingredients from box
1 egg
1 cup milk
1/3 cup butter, melted
Directions:
1.) Preheat oven to 375 degrees.
2.) In a large skillet, add 2 tbs of butter and saute chopped beef sausage until brown. Add the BBQ sauce and heat thoroughly for one minute while stirring.
3.) Stir in the baked beans and set to medium heat. Cook uncovered for 5-8 minutes. Remove from heat and divide among four (12oz) ramekins.
4.) Sprinkle each ramekin with cheese.
5.) Prepare the cornbread in a mixing bowl and pour 1/2 cup into each ramekin. (**There will be some cornbread mix left over.)
6.) Bake uncovered for 20-22 minutes or until lightly golden on top.
