RECIPE:
Chili Pot Pies with Jalapenos
**use 4 (12oz) ramekins
Ingredients:
Chili:
1 lb ground beef
1/2 cup white onion, diced
1/2 of a green bell pepper, diced
1 jalapeno, seeded & diced - divided
1/2 tsp garlic powder
1 tsp chili powder
1 can (14oz) diced tomatoes, undrained
1 can (14oz) red kidney beans, drained and rinsed
1 cup beef broth
1-2 tablespoons tomato paste
salt & pepper to taste
Topping:
I pkg. Martha White's sweet cornbread mix
1 egg scrambled
1/2 cup milk
1/2 cup Colby cheese, shredded
other half of the diced jalapeno
Directions:
1.) In a large skillet, brown the ground beef, onions, green bell peppers, and half of the diced jalapenos. Drain. Stir in garlic powder, chili powder, and salt and pepper.
2.) Add the remaining chili ingredients to the skillet. Bring to a boil. Reduce heat and simmer for 45 minutes uncovered.
3.) While the chili cooks, prepare the cornbread in a mixing bowl. Add scrambled egg, cheese, diced jalapeno, and cornbread mix. Stir well and set aside.
4.) Divide the chii the ramekins and spread evenly. Pour the cornbread mix over the chili.
5.) Bake uncovered for 17-20 minutes or until lightly browned. Serve immediately.
