Stock, sometimes called bone broth, is a savory cooking liquid that forms the basis of many dishes, particularly soups, stews and sauces. Making stock involves simmering animal bones, meat, seafood, or vegetables in water or wine, often for an extended period of time. Mirepoix or other aromatics may be added for more flavor.

Hello Chef. I love your recipes. I have a doubt with this one. Why do we throw away the water that was used in the blanching process? Won’t that get rid of some amount of flavour from the chicken ?

I have enough chicken thigh bones and excess skin in my freezer to fill a builders bucket. I always freeze meat cut offs and throw them out on bin day. For whatever reason I have been holding on to my chicken left overs to make a nice soup. Thank you for this easy recipe. Will definately blanche as the bones will get destroyed if roasted.

Boiling or roasting ? Or should I do both ?
