Watching you sharpen that knife gives me the willies. Would it work if you put the sharpener up-side-down on the table and run the knife through it with the blade facing down and away from you? Maybe it wouldn't work that way, because you know what you're doing ... but it's so scary to watch. lol

Dear Jack.. If you keep a piece of good old rawhide leather handy. Strop that knife 🔪 2-3 times a side on that leathers closed pore side.. shiny side.. and watch the difference my brother. 👊🏻✨
"Look! It has nice edge..." and the knife is completely hacked and destroyed... What a clown. If it sound like a goat is chewing on an onion = knife is not nearly sharp enough.
RedRisotto: The knife he has is a good professional knife and should really be 'sharpened' using a stone, but that takes time, I guess if your in a hurry that 'knife sharpener' he has would do at a pinch! You can see the way he cuts the onion the knife is very sharp and this guy Jack is a professional chef, he owns that restaurant, Chaplins. I think calling him a clown is disrespectful and if you did it to his face, he would tear you a new one!!
