I just attempted to cook this for the third time, and think I finally got it. The most important part of this recipe is where Cheff talks about flavor development. It's also important to wear your Daddy Jack apron while cooking in order to channel the spirit of Daddy Jack.

This dish has become part of my regular rotation. I make it a couple of times a month. Love going back and watching these videos. Sorry I never made it to the restaurant to meet him in person and enjoy his food. It was on my list. I always raise a glass in his honor when I add the wine in one of his recipes! RIP Big Guy.

Hey, Daddy Jack...I don't know how long you've been building your channel, but let me tell you: STAY WITH IT!!! I cannot imagine your channel not taking off at some point. I'm OCD about cooking, and I absolutely scour RU-vid for the best cooking channels and personalities. There are MANY good ones, but there is *something* about you and your presentation that makes me want to watch one video after another. Unlike so many of these RU-vid "cooks" you project an image of absolute mastery over your environment, your equipment, ingredients...and it's SO clear for someone with real cooking experience that you have BEEN THERE, DONE THAT!! You're that rare combination of cook and executive chef. You know how select it, order it, store it, manage it, and f'ing COOK IT! Your'e the total freaking package!!!!!
Glenn and Jack, can you please do a video of actual orders on the line? Like when people order something and Jack makes it? All videos have been one-off specialties, but a real-time customer order would be amazing!
Holy Fuck! I thought I was only one that noticed this! The sounds his equipment make are almost 50 percent of the reason I watch these videos. When he makes rue in the big pot, its the most amazing sound.
@@sebastianluraniec1489 It doesn't NEED to, to each their own :) Food is definitely part of one people's culture but it's far from being a matter of doctrine. You'd be amazed about how much "real EU" food you can actually find on the other side of the pond.
What I like about Daddy Jack is that there's no pretense. This is how to cook, just roll up your sleeves and do it. Sort of reminds me of coming back after a big night on the town, and making a fry up. No time for any Masterchefing in that scenario.

@@jcboom6894 I am all about the blue collar workers but respecting our armed forces includes millions of those blue collar guys who just happen to be working for the well being of all of us. I was proud and touched by the President's great speech honoring our heroic military without which we would not have a Fourth of July celebration. We need to tell the soldiers that operate and maintain those military vehicles how grateful we are for what they do. We also must remember today's military is a all volunteer force. The 4th of July celebration in DC wasn't a show of force it was to recognize and celebrate the men and women of the armed services. It was not political like some would like people to believe, and I know because I was there.

Was going through the fridge wondering what to do for dinner. As luck would have it, I found chicken and broccoli. Love the white wine idea here. So much you can do with it in so many dishes. I'll be adding a pinch of red pepper flakes for just a touch of heat, or perhaps a drop of Tobasco blended in. And A glass of white wine with it. Cheers Jack. Thanks as always
love listening to him, its no bullshit and straight to the cooking. No 20 minute explanations or some weird shit like that, he talks like he has a restaurant to run, hell you can tell in his style of talking. It sounds familiar too, i work in a fast paced fine dining so the no bullshit style is admirable and relatable

The original carbonara from Rome has always been a creamy dish. Today we have the technology to make cream but they didn't in the old days. Daddy Jacks carbonara is amazing so get real and enjoy variations especially this Americana version which is really special. Bacon cheese creamy goodness with a great broccoli and chicken chewy fresh component. And if u did that with only egg and cheese it would be too strong so it's good and better DJ mellowed it out with the heavy cream addition. Don't talk about cooking if u ain't a cook
