Jack was a very special human being. In addition, though he was professionally trained, Jack chose to be 'the working class' chef. His recipes were affordable, delicious, generous, and practical for the home chef. I watch his RU-vid episodes again and again; not just for the recipes but to enjoy Jack's demeanour, his way, his love of people. He is sorely missed and will always be appreciated. RIP in heaven Jack.
He reminds me of my old boss so much, bigger guy. Nice as all hell, has jokes out the ass. Stands just like him, cooks just like him, old school Italian. He made sure I was fed & had a couple beers at the end of my shift for free. I was a dishwasher/cook with managerial responsibilities(keys,alarm codes). Sad to say, Al, my boss past away and had since quit the job. Makes me think of him, he was like a dad to me. R.i.p Al, and thank you for reminding me of him.
Yep, I do my grocery shopping based on Jacks videos, just go back in time and pick 7 of them out once a week and pick up the ingredients. Get some of the triple hot sausage !! Its fantastic !!
I had tears in my eyes thinking of my mother's chop suey. Made with left over spaghetti and chopped onion, tomatoes etc. Shredded cheese and in the oven it went. I love this guy and his hands on (in) the ingredients. Kisses from Canada.❤
Wow. I sure regret the fact that I never got to meet Daddy Jack and eat at his restaurant and didn't get to meet all the great people who surrounded him. Daddy Jack, through these videos, you will live on forever! May you watch over us from a better place!
Same here my fellow Bostonian, my aunt always had a pot of this on the stove. And as I talked to my cousin today that still lives in the house he grew up in back east ✌️😀 it made me think of my aunt and her great cooking. I’m looking forward to cooking this dish, the last time I had it was in the 70s ✌️✌️
Had to post again, as we Bostonians back in the day came from very large families, 7 in my household 😂👍👍 so mom would make food that stuck to our bones ✌️✌️ This dish along with many clam chowder and potato soups 😂😂 Dear ole mom keep us fed ✊✊😀😀
Always loved walking in the back door at mom & dads and seeing a huge pot of "slum" sitting on the stove. It was great that night and even better the next day. I miss my mom and her wonderful meals.
The comments here reflect that it is smaller knife then a Large Chef Knife. I like a smaller knife, it has more utilitarian purposes and is less cumbersome. I dream of a perfect marriage between(so-called) utility and chef knives. Maybe a 7"? Can anyone suggest a mm length?

@@v1antbo Doesn't hurt a damn thing. Pansies these days are delusional thinking everything has to be so over sanitized. Hands are no more dirty than the utensils that have touched numerous things or had unknowns sprayed on them. Same with those plastic gloves.
I also remember the lunch ladies at school. We’d be extra polite and if lucky get an extra serving of the days dish. Back then we all knew their names and they all knew our favorite dishes. Good memories!
I love American Chop Suey. I've been making it for over fifty years and I never tire of it. I make mine pretty much the same as Daddy Jack but also use chopped celery in the base. In any event, I've already made the grocery list so I can cook it tomorrow for dinner.

Grammy and Grampa used to cook American Chop and my Mom did too. It was always around in central Mass my whole life. I like it very simple. Macaroni, hamburger, tomatoes and onion. Seasoned with salt and pepper. My twist is shredding the onion on a cheese grater so it just melts in. Canned tomatoes. And I like it a little bit juicy. It is simple and sweet and beefy.
i'm chief cook and bottle-washer at my house. i'm an electrician and always conscious that my hands may not be clean enough to be cooking . my uncle was a diesel mechanic and i came to find out that's why he always did dishes , to keep his hands clean. as with you , i do dishes to clean up my hands . nothing like scrubbing pots to be sure my hands are clean . then i'm ready to prep. as in your other videos, it's gratifying to cook a nice meal for your family . sometimes my big -batch , slow-cooked meals get shared with my older friends that are not apt to cook such meals for 1 person. they love it . i love it . it's truly a win -win. thanks for the ideas jack

Great video. I was raised on goulash. No matter how bad a day you had, mom making goulash or newdelki (I think was a polish version we had) was incredible.
An American classic from the 50's, Jack. My mom made it, too. She used Campbell's Tomato Soup. My mother-in-law made it as well. She called it "Mrs. Grundy's". Great Stuff! Take Care. Ed

I dig watching you chef and how you prepare and cook your dishes. As a part time pro from the south It's funny how a lot of our dishes Kind of have the same bases. Reds greens Onion , stocks. You would kill any gumbo or etouffee jambalaya. Oooo and the Blues.come on .. You have some southern Cajun in you somewhere down the 🌳 lol. Hats off keep cooking with the Blues! I was raised eating this thanks for the memory going to cook it tomorrow. We did the same except add pan fried sliced carrots fried chopped celery 1/4 can brown beer Tabasco to the sauce.
My dad used to store his potato chips and spare coins up on the highest shelf in walk in wardrobe. Since all us kids moved out he stores them in the kitchen now but i still occasionally pinch a small handful whenever i visit. Its tradition.
That looks amazing!!! Love Goulash, grew up eating it as well. I am German/American and we only add ground beef to ours, but the addition of the Italian sausage looks so good too. I will for sure try adding some next time I make it! Thanks for sharing, great video!
The best part about this is not only the addition of that sausage, but the fennel that is going to set everything off. Fennel is a crazy underrated ingredient in ground beef "stews" like this. Next time you make homemade chili, add some finely diced fennel into your base alongside the onions and garlic. Kaboom!
This channel just popped up on my “recommendations”. After watching a few, I found out he had passed away. That’s sad. He was very talented and had a great personality. I cleanup as I prepare a meal, too. It makes the task much easier and it gives me something to do as I wait on things to simmer down or bake through. This dish looks yummy!
I remember this one well. Great winter dish especially after an afternoon of pond hockey. My humble input. Add some crushed red pepper and utilize some of the starchy pasta water for thickening the sauce. Skip the American cheese and toss with handful of grated Parmesan or Romano! Serve with bread and buttah 😊
Man ever since I found chef Jack, I have been hooked on all his recipes. This is real American comfort food, like you would make for your Familia. I am Hispanic and all the dishes that chef Jack has made brings it home for me. God bless you for all these great recipes that I can make for my family.
Daddy Jack you are the bomb! I love these recipes. Goulash was made by both my German and Polish grandmothers. I love the addition of the Cheez -It' s. I will try it for sure. Keep up the great videos. I love watching them!!

We always called it American Goulash! My dad taught me when I was about 10 and I cooked this for my Cooking Merit Badge for about 30 and they talked about it for years! Just made a batch this weekend! Just found your channel
