A great chef can keep things 'relatively' simple but do them far better than us normals could, a normal trying hard will see that extra time as an opportunity to try to be creative. The extra time is an illusion, elevating a dish to another level while being quick/efficient/whatever is what a restaurant needs to survive first, then thrive, unless they are aiming for a L'Enclume-type experience but that is fairly niche. An amateur thinks in terms of ingredient over time expediture, a professional thinks in terms of time over ingredient expenditure, getting the most out of simple concepts is the bulk of the restaurant business and gets people to eat dishes out (and pay a premium for) that they could make at home.

@nanoflower1

That's why they are no longer normals. Mike has enough sense of what works to take the sauce from bland to something tasty just by adding different ingredients. A true normal would end up with something awful.

I think it would be interesting to have a chef vs chef battle with an assortment of random mystery box ingredients, but the caveat is that both chefs have to randomly choose a normal to partner up with from the spinning wheel! There could be challenges like swapping the person on the team in the kitchen after an amount of time or something else but would be entertaining seeing how the chefs collaborate with their normal
