G’Day guys! Beef short ribs are one of my favourite things to bbq! Everyone has their own way and this is how I like mine!
Southern grain beef short ribs, trimmed and rubbed down in Smoky Pastures BBQ ‘Risk It’ rub. I like my short ribs peppery and this rub is perfect.
I love using native Australian hard woods in bbq so I used a few chunks of Aussie Oak (stringy bark) from Natural Smoke Australia.
Grab yourself a pack of ribs, follow along and you won’t be disappointed! Short ribs are melt in the mouth good 👍🏼

Good video mate - what temp do you run your ribs at? I'm cooking some at 285F on kettle using Slow n Sear. If I filled the kettle with that many coals the temp would rocket to 400f+. What coals do you use?

Hey mate! Was a while ago so I’m guessing here but probably round 3 hours. I just push till probe tender, I don’t worry bout times or temps

I would not take of the membrane and wrap in butchers paper instead of foil. The foil can ruin that hard worked for bark.

Each to their own mate, I no longer trim my beef ribs at all. I feel it’s a waste and I agree on the foil also!
