This healthy salad is super versatile and made in a snap! It's LOW CARB. It's VEGAN, if you leave out cheese and meat. It's VEGETARIAN, if you leave out meat. It's OMNIVORE, if grains or legumes are added. It's simply the best!
It's the perfect make-ahead salad for BBQs, picnics, potlucks, etc.
Recipe:
1 lbs broccoli florets - chopped
2 medium stalks celery - chopped
1/2 cups seeds and/or chopped nuts of choice
1/2 cup finely chopped onion (red onion adds a nice color)
1/2 cup grated cheddar or other cheese of choice (feta is good with it)
1/2 cup "meat" of choice - bacon bits, ham cubes, chopped sausage, chicken
1/3 cup chopped dried fruit of choice - dried cranberries, raisins, dates, etc - or fresh grapes - optional
The salad can also be made with riced cauliflower or a combination broccoli/cauliflower.
If adding rice, quinoa, chickpeas, cooked barley, etc, please increase the amount of dressing.
Dressing:
1/2 cup olive oil
2 tablespoons apple cider vinegar or vinegar of choice
1 tablespoon mustard
1 tablespoon honey
1 - 2 cloves garlic
1/4 teaspoon salt or to taste
pepper to taste
