Best Knife Sharpening System In The World? - Viper Sharp Sharpening System
vipersharp.com/
In this video Jonathan Heffron reviews the Viper Sharp Knife sharpening system.
The ViperSharp precision sharpening system will hold the blade secure without causing any damage to your blade. It’s unique clamp will hold onto your blade tight and at the perfect angle you choose so the blade is not forced out of the clamp. the rubber enhanced gripping tips will ensure that a coated or polished blade will not be damaged while sharpening and the guide rod allows an ultra low profile that other systems only dream of. Secure it to a table or use as a mobile device but rest assured that you will get an edge that you need in record time.

Have the system, quality control issues quickly resolved by manufacturer, thanks Mike. The angle will always vary over the length of a blade, but if the clamp is positioned in exactly the same position each time, this doesn't matter. I have a template of each knife I sharpen, showing the clamp location. I also have 2 clamp positions for longer knives to even out the angle variation. In all honesty, this is a system for pocket knives, to 100-125mm or so. It does a great job, consistent, with polished, razor sharp edges. It is a bit too light weight for longer chef's knives. They need 2 clamp positions & 2 clamps are essential to make it worthwhile.

My opinion, as a retired machinist with over a half century working in prototype development, is that this is a very elegant design. I particularly like the "flip over" dovetail [Edit: not a dovetail - more of a T shape. Same result] feature which puts the opposite edge on top though I have not figured out how it locks in place yet. Provided there is no "play" in the fit I would give it a big thumbs up. Also, the extended jaws of the clamp with the recessed screw head prevents interference of the moving rod 16:51 with the holding clamp mechanism. I also like (very much) the clip on feature of the stones which makes changing them literally a snap. I also appreciate the overall appearance of this unit which looks far more professional than anything else I have seen so far on You Tube (haven't seen them all yet). My only criticism is that the base seems to move around quite a bit if you don't hold on to it securely. I would suggest a detachable arm extension of the base capable of being bolted to either side of the base which would allow for a C clamp to fix the unit to the table to keep it from jittering around while stroking the knife, or some other system which would fix the base to the table. This is obviously not absolutely essential but it would make the process a bit more enjoyable I would think. Nice video! Thanks for sharing!

Nice set up . I use the K.M.E. set and love the accuracy these type sharpeners work for the novice as well as the seasoned sharpener !I am sure that this kit is well worth the money and one of the best additions to the everyday hunter would appreciate having . They simply make knives scary sharp !I would suggest lightly looping your left index finger over top of the guide rod , behind angle guide , with just enough downward pressure to allow ease of motion , but , it removes the tiny play inherent to the bushing . It makes just that much more of a difference to be worthy the effort , in my opinion . The diamondset is worth having for knives with high carbon / high Rockwell, like Kabar and Buck knives , once those get dull , they can be a bear with stones !I have 21 years of knifemaking of Custom Deer Antlered knives , and personally use a fine steel to touch up the edge in the field , but , once you put an edge on your knife , like these sharpening kits , you'll become a believer in them.! Certainly worth the investment !!

Even as someone that sharpens by hand I think there is a lot of value to be had by having a guided sharpening system. Resetting or repairing a bevel with a system like this makes sure you have a nice, clean, and straight bevel to start with. I don't care how good you get freehand (I've been doing it over 25 years now personally) you'll never be as "perfect" freehand as a guided system is at keeping an angle.

You view on the subject reminds me of individuals who claim they can sharpen a drill by as good as a machine/jig. I've been a machinist for 40 years and I will always defer to a machine/jig for accuracy.
@jacksnotty2318
@jacksnotty2318 6 лет назад
Of course the question is… Do you need a perfect bevel or do you just need a really sharp knife? I can put a hair shaving razor sharp edge on any knife in about 60 seconds using a homemade MDF wheel. This is just a knife my friends. You don’t need jigs, you don’t need fixtures. Just a little practice at creating “close” to the same angle each time and you’ll be fine. After all, you’re not doing heart surgery with this night. You’re probably cutting boxes and string like the rest of us. Let’s not overthink this. 🤔

Say what you want about the lansky system but when the weekends when everything fun was closed because of corona, I sharpened everything that moved and some. It will sharpen 8.5 inch kitchen knives no problem to cut newspaper. And by the end from watching videos and taking a little from each that I thought was helpful learned I can get a pretty wicked shine on that edge. And replacement parts are dirt cheap.

the RUIXIN PRO RX-008 is $45, does larger knives, comes with six stones i believe (I'm getting a set of three diamond ones too)- the stones are like twice the length of this model- this model here is more the size of lansky system really- a bit larger only- I dunno- $185 seems a bit steep for this? ViperSharp Ultimate Professional Knife Sharpening System is now at $799.97 while the comparable Wicked Pro Pak ! is now $200 less. I believe the Wicked sharpener to be superior. Though the basic Vipersharp sharpener is $170, you can't do much with it as is. As someone below mentioned, the Lansky system is the more affordable option, and works just fine.
@weilki451

First of great video. To be honest I use an edge pro which i love. This system looks ok for smaller knives such as pocket knives. From what i seen the size of the stones it would take a long time to sharpen anything over 3 inch blade. I would say that with out a doubt it is better than the lansky. But, I would rather have my edge pro over the viper because I can do any size blade with out having to split the knife up i just have to move the knife to get the edge i want. Also i would rather have the KME because the size of those stones on the viper are so small.

I just bought a CUTCO 7-5/8 petite chef knife.. It is hands down the sharpest knife I have owned in my life. It is so sharp I have laid a hair across the edge with gentle pressure and the hair cut in two pieces. I see that the factory grind is not a mirror polish, but instead quite rough and in one direct towards the apex. When looking through my eye loop I see the sharp apex across the edge come to a point with no burs whatsoever. In my opinion it seems the sharpening was maybe done using a belt, and yet the grind on both sides of the blade are flat and not concave as with a belt. Interesting. Anyways, this is a good example that a mirror polish is not necessary to obtain an extremely sharp edge.

i bought one, i am not 100% impressed with their quality control. The top swivel wouldnt screw into the adjustable shaft as the threads were damaged and I had to chase the threads. After using it for the first time, everytime i swapped edges, i had to correct for the angle change. Its a decient system, that will need upgrades and improvements over the next while. It will sharpen the primary edge but not the secondary edge. and very hard to sharpen small knives as the knife holder gets in the way, it needs to be a shallower angled holder....anyway thats my 2 cents, thanks for the review!

Interesting, if it works for you that’s great, to me it looks like a mix between a low grade copy of the Russian tsprof and a wicked edge cobbled together, I have none of the above but have seen them in action before. It seems a little wobbly, the bit that holds the knife slides when you file the blade. It does seem light though, which is good, the propriety stones is what put me off the wicked edge. If you attach it to a pice of thick wood then clamp that to the table then you should get more stability combined with mobility. What does it cost?

Looks like a pretty hoky design for an up scale sharpening system. The fact that it has to be mounted to a bench or table. In order to have a stable base and your limited to only select blade sizes. And also if your blade isn't set in the clamp just right. The edge of the knife will get screwed up for a little more money. You can get an edge pro apex which is faster and way more versatile. And you can use it anywhere and have no fear of damages to yourself or the blade. Also practically sharpen any size of knifes up to 3 1/2 inch wide. being able to re-profile edges is also awesome with the edge pro I'm not saying the edge pro is the end all sharpener it's not. But if this system works for you I say rock on but personally I would not spend the money on it.

I have the field & sport pro wicked edge system & will stick with that. I have bought extra stones now have 50/80/100/200/400/600/800/1000/1500 diamond grit stones with 1200/1600 ceramic, 5 micron lapping film glass & 5/3.5 micron leather strops. Also digital angle guide & jewlers loop. I bought a gun case with pick & pluck & custom made to fit everything in it.

I guess I should have just read some previous comments and yes 185 for this is a bit much. I guess it its back to the old Work Sharp KO edition.

I bought a Lansky Diamond System for $59{new}...a pedestal$11...A extra Leather strop($9)...an a 2000 grit Sapphire stone($10) and am happy with it...being a retired machinist I will modify the system to make it more stable and probably make longer rods to use system on longer knives. But overall the Lansky is very good.

Wraglestar had one from Russia he wanted 350 usd looks very similar. The Russian one had its own means to find proper angle.

Slicing paper is nice but shaving your arm or cutting a tomato without pushing is better. I use a 1200 grit diamond stone held at around 30 degrees followed by a few passes on a leather strop and its sharp as heck and costs a lot less then this contraption.

Systems with stone rotating over fixed pivot point will not provide the same sharpening edge angle along the knife's length. The preset angle is valid only at the point on the knife edge where you set the angle and is related to the length of radius between pivot point and where the stone is touching the knife's edge. When you move stone along the edge the length of radius is changing so is the angle! Ex: Suppose the distance from pivot point (radius) is set on the middle of 8 inch long knife so you can move stone 4 inches from the center in either direction. The radius will increase so will the angle. I looked at The DMT Guided Sharpening. It will provide constant angle if, and only if, the top surface of the stone and surface where adjustable pins are moving are on the same horizontal plane.

How did you sharpen the serrations on that Spiderco? Would this system be able to handle recurved or tanto blades? Alslo, how do you find the original grind angle? The magnetic digital angle measure might work for a chisel edge but what about othar types? Call the manufacturer?
@Wingman115
@Wingman115 6 лет назад
I have a round diamond rod for the serrations. As for the angle. Most blades are pretty close to 20 deg kitchen knives are around 17. When in doubt I line it up and look at the leading edge. Still more uniform than trying to sharpen by hand and eye only.

Find the angle with a felt pen, mark the edge and try a stroke , see where it needs adjusting until you take all the pen marker off.

QUick change to swap sides is a good idea but the stones look too short for a lot of knives, Also stropping just folds the burr back and forth to break is off, there's little to be gained stropping one side repeatedly

system like this and any similar to it is going to produce a brittle Edge that will blunt and dull quicker due to the lack of structural strength from being sharpened at a so-called perfect angle both cutting sides are flat which causes The Cutting Edge to have less ability to withstand Hardend material essentially as soon as you cut anything stronger than paper it will fold or break when you sharpen by hand the slight inconsistency of a hand causes a beveled Edge that is slightly rounded which gives the Cutting Edge more strength and allows it to withstand stand tougher material this will also change according to the angle the blade was sharpened at the finish that the knife has also knives should be sharpened for their intended use a knife with a Razor's Edge will dull quicker than a knife that hasn't been sharpened as keenly and a knife that was sharpened on a rough Stone may cut rope better than a knife that's been honed to a mirror because the rough Stone will cause micro serrations in The Cutting Edge that allows a blade to grip and bite into the material being cut is a razor blade is cutting off of Applied pressure on an incredibly small area once you cut something hard that perfectly Polished Edge becomes blunted and bent and is no longer an effective cutting tool whereas a knife that was sharpened on a rough Stone would take much more damage before being rendered effectively useless and for a true Cutting Edge always remember to use a polishing strop and compound on any kind of edge to clean it up
