Hi, Diane, this is the recipe, I’ve done the most and will do again today, because I’ve a rest of potatoes, spaghetti and tomato mushroom sauce… just adding crushed tomatoes and carrots, a splash of sugar, Estragon, soy sauce and vegetable broth. I cut the spaghetti with my kitchen scissors, make nice small cubes from the potatoes and carrots, sauté everything in olive oil and add the fluids. Maybe some curry and peas will join the mixture … when mixing all the (every time changing) ingredients I’m always sending greetings to you and your mum. Although I’ve often commented your videos I obviously forgot to comment here… until today, haha! Love, Monika❣
Oh my, I think I need one of those pots. To be able to sauté in the same pot before slow cooking is definitely a shortcut! Thanks for showing us you’re Mom,s recipe for Minestrone soup, it’s a good one to have for busy fall dinners.
Dear Diane, since about 3 years I am referring to this recipe so many times! I love that the recipe is so versatile, you can use whatever you have on hand, and it is always delicious! I can eat soup for every meal, every day - summer / winter!! My favourite dish... So please Diane keep passing on Mum's great soup recipes! Appreciate your "appreciation" of salt and pepper Diane - I pack seasoning into my cooking as well.. I stand by the fact that salt brings out all the flavours in the food :) Being of Mediterranean origin.. we add stacks of herbs too - basil, thyme, oregano, rosemary.. whatever! Minestrone does end up being a bit of a "pot luck" kind of dish.. but I love it for its versatility and it's incredibly healthy! Tak for your company whilst I ate my lunch today Diane... Helen :)
Lovely video Diane. 🙂 There is no right or wrong way to do a Minestrone soup. In Italy we have different recipes but in cold winters they taste all good. Any dish is good when it is done with loving care. And in your soup there is plenty of enthusiasm 🍵.
I have built up the habit of watching your videos only when I am doing something from my to-do list. Today I watched while doing my ironing. This is working so well for me as not only do I feel that I have some company, but I am also inspired to get on and do the next activity on my list. Thank you so much for sharing.
You just reminded me that for a while I only allowed myself video time if I was either cleaning with Diane or riding my stationary bike during them. I used my earbuds, set my phone up where I could see it and just pedaled away calories while watching. Need to get back to that.

The Instapot looks so convenient and fun to use, and your soup recipe looked so good, Diane :) I am a huge soup lover and have not been successful with my soups in the past. I will forget about them, and they scorch, or just don't have the right consistency, taste, etc. I told my husband, "I know you are not supposed to need any special tools, but I think this one could help me with my soup making!" Plus, "borrowing" your recipe might help me too! I just looked on Amazon. Maybe a Christmas gift...hmmmm....but I want to be frugal, haha Might I ask, is yours a 3 qt, 6 qt, or 8 qt?
What a great, simple recipe. Have a "cool" day in Florida and this will be great dinner for family. Have a similar pot and this will be a nice recipe to use in cooker. Did you find salt and pepper gadgets at IKEA?
I love my instant pot! I just got it a month ago and feel like I cook everything in it now and barely use the stovetop. I haven't used the slow cook function yet, are there resources you go to to find how to use it for most of your foods or do you just kind of "wing it"?
Hum yummy!!! I add small macaroni in my minestrne and serve with a drizzle of olive oil, parmiggiano and basilicum!!! Minestrone is always a success at home
