Minestrone soup is the most traditional Italian soup made in households all over Italy. Most families have their own version, but my absolute favourite is when the right mix of fresh vegetables and herbs come together in the pot and infuse to create the most mouth-watering broth - the most important part of the minestrone soup. Add some cracked pepper and a generous serve of pecorino cheese and you’ll warm hearts through every season!

MINESTRONE SOUP | How to Make Vegetable Minestrone Soup
INGREDIENTS:
1 whole onion
1-2 carrots
1 Celery stalks
1 whole broccoli
1 zucchini
¼ pumpkin
½ Savoy cabbage (optional, you can also add rapini, chicory)
½ cauliflower
4 ripe tomatoes
200g - 7.01 oz lentils
200g - 7.01 oz Mixed beans
Fresh rosemary
Fresh parsley
Pecorino cheese
Extra virgin olive oil
Salt & pepper
Water
UTENSILS:
Large pot
Chopping board
Sharp knife
Tablespoon
Wooden spoon
Ladle
METHOD:
1. Minestrone soup is a classic, so start with the classic ingredients: carrots, celery and onion.
2. Chop the celery stalk, carrot and onion into cubes or small pieces. Hold on to the beautiful celery leaves and chop them up too!
3. Place a large pot onto the stove at a medium heat. Once it starts to warm, drizzle between 4-5 tablespoons of extra virgin olive oil into it and leave to heat up.
4. When the oil is nice and warm, add the chopped celery, carrot and onion. Stir around, then add a sprig of fresh rosemary.
5. This process is called the “soffrito” and it is very important you let this cook through well, as it forms the base of the flavours for your minestrone soup.
6. Gently stir the soffrito every now and then to make sure they are moistened with oil and cooking well.
VINCENZO’S PLATE TIP: Minetrone soup can be made up of your choice of vegetables - and often turns out best when made with whatever you have left in the fridge!
7. While the soffrito is cooking, chop up the pumpkin, broccoli and zucchini into small chunks and try and keep the size similar for all the vegetables so they cook evenly and more or less at the same time!
8. Once the minestrone soup soffrito has been simmering for at least 10 minutes, add the pumpkin, broccoli and zucchini and stir them through.
9. Add just enough water to cover them. Then leave this to cook for 20 minutes with the lid on, again stirring every so often.
VINCENZO’S PLATE TIP: If you have stock you can also mix this in at this point to add even more flavour to the minestrone soup, instead of just plain water.
10. Next, cut up the rest of your vegetables. In this case, savoy cabbage, cauliflower and fresh tomatoes. An alternate option here is to use peeled tomatoes or a jar of Italian passata.
11. It’s now time to add lentils, mixed beans, tomatoes, savoy cabbage and cauliflower before once again covering the vegetables with water and leaving this to cook for 15 minutes, with the lid on top - and don’t forget to stir every 5 minutes!
12. Add a generous amount of salt and pepper to the minestrone soup and stir through well so all the ingredients are really well flavoured.
13. Turn off the stove after 15 minutes (or once your vegetables have softened), then sprinkle a generous amount of pecorino or parmesan cheese on top, chopped parsley and a generous serve of cracked pepper.
HOW TO SERVE
Using a ladle, scoop out a generous amount of minestrone soup into a bowl and sprinkle a small amount of fresh parsley and pepper on top. It is best served with some freshly grilled or toasted slices of bread on the side (which taste yummy dunked into the soup!

I am so glad to see someone make a soup with out a premade stock. That seems to be the style today and all these veggies make their own beautiful and delicious stock. This soup looks delicious!!

This mixture of vegetables is dealiscious! I cooked it these days when it was pretty cold outside. The whole pot was eaten up in an instance. I didn't use the dried beans though. Yummy. Yummy. ☺️

I love minestrone! I also love borscht, goulash soup, bouillabaisse, lobster bisque and some less known soups made from local products in my area. I don't think minestrone is the world's favourite soup, but it's very popular in Italy. I found several world soup ranking lists on the internet. Minestrone was in top ten in a few of them and in top 50 in most of the others, but never number one. That will not stop me from enjoying it!

Almost exactly like mine but I cook longer in crock pot and use homemade vegetable stock that I make from my kitchen scapes no cauliflower sometimes cabbage but we usually add spinach a few basil leaves and 1 clove of garlic

Unfortunately, I couldn't get all of the ingredients and at the end my pot was too small, so I had to leave out the cabbage and the cauliflower, and I had to replace the pumpkin through the sweet potato. It's good to know I can add in whatever veggies I want. I think the mirepoix and tomatoes are essential though. I like to use kidney beans, black beans, and great northern beans. I would do kale in there too maybe in place of the broccoli or cabbage. I think it is nice to add noodles but it is healthier to avoid the carbs. I'd this with a steak though lol.

I spend the entire day listening to Italian music (mostly Vivaldi), and preparing Italian food. "YUM"! This is cheaper than therapy and probably more effective. Since I found you, I have learned much and have been inspired to prepare your delicious dishes as often as possible. I am especially impressed with the "secret ingredient" in all your dishes; "LOVE". I am wondering why you did not put any garlic, basil, or any other italian seasonings. I always include those in my soup. Also many minestrone soups include cheese rinds for added flavor. Your soup looked fabulous. I just found your channel today. I am looking forward to more videos from you. 💟

Ciao Joan in the video I said I usually use the parmigiano rind but my wife doesn't like it so i didn't use it..also yes you can add any ingredients you like. Usually basil is not fresh in.winter so I don't use it but you can literally use any vegetable/ingredients you like. Thank you very much. Have a nice Sunday. Love your videos, but one thing: Peccorino Cheese is not counted as vegetarian (also Parmigiano), cause of the rennet. So if people want to go vegetraian, they should use cheese which is made with microbial rennet

The mixture of celery, onion and carrots is called soffritto. It can be bought frozen from the supermarket but I prefer freshly made ones...🤩🤩🤩

@@vincenzosplate That really depends. Locally produced produce that is in season is always better no questions asked. After that things start to get a bit murky. Local produce that is then cryogenically frozen (-70/80 C) or even machine frozen (-40 C) is of a very high quality. After that comes produce that had to travel half of the globe to your table, and actually ripens in transit with the help of additives, but technically is fresh (it has half of the flavour and even lover than that for nutrition). And the last stage is produce that had to travel a very long way and was then frozen and after that shipped to the chosen destination (sadly this is what a lot of frozen food consists of).

Lovely dish. I prefer white beans over lentils an more greens (escarole, kale and chard) and garlic in after carrots, celery, fennel and and leek. I use a huge bunch of herbs (rosemary, thyme and sage) but like you remove them before serving. I also use more tomatoes than you and will sometimes use a bit of crushed canned tomatoes as well. I bet if I tried your pumpkin trick, I wouldn't need that. Next time! .

I have made a few variations of Minestrone over the years, some of which used chicken leg and thigh meat. Was it originally a vegetable-only dish? I have not used pumpkin. I have used proper turnips (not the huge "swedes" or rutabagas but the small white ones with the purple tops). Otherwise, the carrot, celery, onion, zucchini, and beans are there.

I tried making this tonight. It tast very good but mine looked a bit more yellowish instead of orange. I guess thats because I used a butter squash instead of the pumpkin?
