Hands down the best cake recipe! I made one as directed and I also made one using apple sauce instead of eggs. My gahhhhh! I also used so delicious coco whip as the frosting. 10/10! ❤

When I shift from almond flour to coconut flour I always add extra eggs. I think the almond flour lets you taste the chocolate better than coconut, which changes the flavor a little. I cook down a can of coconut milk with about 4-5 ounces of chocolate chips until it reduces and thickens a bit then I add unsweetened coconut flakes and pecans or walnuts and slather it on my cake!
Coconut flour can be substituted in most baked goods, but it’s not a 1:1 ratio. You’ll either require more moisture, or a lesser amount of coconut flour than you’d have used of almond flour. Personally, I love coconut flour, but I still use almond flour more often. I get mine at Sam’s. Costco is also a great place to find it for a competitive price. Unfortunately, the price of everything has gone up.

I know it’s a favorite for many people who aren’t into chocolate. I thought of tweaking this recipe because it looks so incredible but I’m scared that if I simply omit the cocoa powder and add vanilla extract the texture might be off. Stevia or monkfruit are supposed to have fewer side effects? I'm not an expert though and have never tried either. I'm planning to try both for baking. I do keto and very occasionally have a need for something sweet (I don't have much of a sweet tooth), so I've been exploring recipes and am planning to experiment with stevia and monkfruit too. Am I the only one here that thinks it unsanitary to put salt in a dish to pinch from as you cook. Unless you wash your hands well before using the salt, just the act of all the ingredients that gets touched while making food and it contaminates the salt in the salt cellar/container. It would be better to use a little spoon or scoop than to touch the salt with dirty fingers! Not to take away anything from this DELICIOUS recipe! I am already making the sweet potato chocolate pie today but I’m excited to make this soon!
