For the best sear, don't move the meat. Place it in the hot pan for just a minute, the turn.

Just had to come back and comment. I watched and used the coupon when this bid first aired, has it only been a couple of months!? I have made so much using my sou vide since getting it. Steaks, a pork loin, fish, chicken, some tomahawk pork chops, all of it has been fork tender, and moist. Our son likes his steaks well done, and we eat ours medium rare, so I cook his to 158° for an hour, reset the temp for 134° and place some bags of ice in the water until the temp comes to the indicated degree, then remove the ice, add ours in with his, and go for one more hour, perfection!The flavor is incredible, I sear the meats with a torch and get that wonderful carmelizing. Thanks so much for sharing the coupon deal with use, this has been a wonderful investment.

Don't put oil or butter or any kind of additional fats in the bag with your meat. When everything's all trapped in like that and there's no evaporation at play, putting fats in the bag with the meat will leach flavour out of the meat because flavour compounds in meat are fat soluble. Instead of enhancing the meat with the flavour of the olive oil, you're enhancing the flavour of the olive oil with the flavour of the meat. Fats (so butter, basically) should be used during the searing process, not the actual sous vide cook. Also, it helps the searing process if you pat the cooked steak dry with paper towel before tossing it in the pan.

Try these two things. Dont add oil to the bag, it muddles the flavors because fat is flavor soluble so it pulls some of the flavor out. After you take it out of the bag, pat it dry with paper towels to get a nicer crust. Other then those two things, It looks amazing. Great job.

I've always wanted to try a sous vide, so I loved getting to hear your thoughts on it! Not sure if this is helpful, but when seasoning with salt and pepper, do it from high above. It helps distribute the seasoning more evenly over whatever it is you're seasoning so it doesn't clump all in one area of the food. That looks so tasty! It looks like it will melt in your mouth.

my father uses the same thing and he has made sooo many different types of meats in it!! all of them delicious!!! i remember when we first had a steak in it! my reaction was the same as yours ! i was shocked that you could cook steak in like water 😂😂. love you and your vides❤️❤️

We have a sous vide machine and you can cook amazing fish in it!!! LOVE IT! If your area is prone to hard water I would recommend using either RO or bottled water. Our elements crust up sometimes if we use tap. I will definitely try steak using ours as well! Your steak looked AMAZING!

Wow !!!!!! That’s so cool I’ve seen these I thought it was a fancy stove top use thing that just continuously circulates the water... I’m so excited for this Because the apartment complex I live in doesn’t allow outdoor grills and I’m not a fan of pan fried steak I can’t wait to try this and..!!! No special bags. One thing I would to is kind of smash the rosemary and yes fresh rosemary is the only way to go. Here in NW Oregon it’s easy to find someone with a bush of it they give it out. Why do you spin the steak while searing? I've never seen that before. My husband and I are huge steak people too. I'm seriously thinking about getting that. Please try other recipes with it!

Yes, it’s safe in ziploc bags. The water doesn’t get hot enough to do anything to the bag.

I have a question/curiosity... Why do you turn the steak in the pan on the stove I stead of leaving it still? We use the sous vide cooker a lot at my house. The kids love fresh tuna steaks cooked this way.

Just so y’all know...ziplock bags soften (meaning they can leach chemicals) at 195F. Water begins to boil at 212. If ya don’t want polyethylene plastic on your food, I don’t recommend using ziplock.

That seems like the perfect method for a mom on the go and just 2.5 minutes to sear the steak it gives you plenty of time to get the rest of the meal ready and still get to spend time with your family instead of stuck in the kitchen thanks cilla for this great video

Grilling is better than frying. You can cook outside on the grill, or try a griddle. We no longer eat fried foods.
