This is a great way to use that venison backstrap you have in the freezer or fresh right now. I will show you how to make a Venison Wellington with it that will impress everyone in your family or just the guys a deer camp. Everyone who hunts deer knows that the backstrap is the best part of the animal, so you should do something special with it. If you age that in the fridge for 14 days, it will be even better. How to make a gourmet meal with your deer meat is a skill that you should learn. Fancy resturaunts import venison from South America to make this dish and sell it for big bucks to folks in the BIG cities. Us country folks have it all the time and it is delicious if cooked properly. This will take you over the top at Deer Camp or at Home.

Round 2 was definitely better but I wouldn't call round 1 a fail. You put some A1 on that & ate the whole thing. LOL!! Gordon Ramsey is a prick!

My vote goes to a Backwoods Gourmet Wellington any day over ole Gordon's Wellington. Gordon cooks with too much fruit. His cooking is too fruity for my taste.

Actually I think there is salt in that marinade. My bottle of Lea & Perrins says it has 65 mg sodium per teaspoon and low sodium soy sauce likely isn’t no sodium soy sauce (otherwise that’s what the label would say. I have hard time imagining that no sodium soy sauce would even any good.). Not that any of that is here nor there, I imagine anyone who has to limit their sodium would know those sauces contain sodium. I guess that statement just triggers some ocd in me!

You know that Gordon Ramsey is the Gordon Gekko of cooking. Venison Backstrap is my favorite cut off of the deer, I just ate the last of mine so all I can do is just watch and wait till the fall deer season is on.

Thanks for using venison in this new try. We mostly use venison in place of beef. Most everyone avoids wild game in cooking and puts all of their venison harvest into sausage. I don’t and I will give this one a try or more than likely two to three before I get it down. Keep up the good wild game content!

After you took it out of the marinade you told us you seasoned it before you seared it off, but you never said what you used to season it.

I own 7 diff restaurants. My customers loves this dish. We cook it a little diff but still looks delicious. I marinate mine in apple pie moon shine. I seared the meat then smoked it for several hours at a low temp. Great video bud.

Let me say this, I don’t always agree with your recipes or your method! But my friend, you nailed this one out of the park!!!! They actually both look great but that second one looks amazing! My fiancé loves Wellington and I’m going to make her some beef Wellington and some pork Wellington. And see you, I’m gonna do it outside!

Best way is to put the fat down on the cutting board and run your knife along the cutting board with pressure.....Works great and fast
