Best Way to Cook SPARE RIBS Sous Vide - How to Smoke ST. LOUIS SPARE RIBS!

It's about time I cook my favorite rib! St. Louis Spare Ribs. To me they are much tastier than baby back ribs. Not to mention they also cost less than baby back ribs. I am just trying another experiment with butter as I am cooking 2 of these spare ribs sous vide. I decided to add butter to one and see if there was any difference on them. Results were the same as with steaks!
With these beautiful spare ribs I smoked them in my smoker for 3 hrs then cooked them sous vide. It was also time for me to cook another side dish and I decided to make corn on the cub! I was extremely surprised how much corn floats when you make them sous vide. So it was kind of funny when they felt off the container, I was not expecting that! HOW TO COOK SPARE RIBS SOUS VIDE (St. Louis Spare Ribs)
*Smoked them on the lowest setting of my smoker for 3hrs. (154°F / 67.7°C)
*Then Cooked them Sous Vide for 20hrs @ (150°F / 65.5°C)
HOW I SEASONED THESE ST. LOUIS SPARE RIBS
*Spread a thin layer of yellow mustard and add your favorite BBQ rib

HOW TO COOK CORN ON THE CUB SOUS VIDE
*I cooked the corns Sous Vide for 1:30hrs @ (185°F / 85°C)
* I did not do much just added the corn to the bag with some butter on it. Did not add any salt or anything else They came out perfectly.

best way to make corn is 4 minutes in microwave, husk and all. then while still hot, cut fat end enough so you can see kernels, press on thinner end and corn slides right out, add salt, butter and enjoy. I find it more flavorful this way as it cooks in its own leaves and doesn't loose any nutrients. give it a try! :)

First channel I've gone BACK to videos I've seen to like them and the first channel I' ve liked every video on. you guys do an amazing job and I love the energy you give in the videos. Also the fact that you guys are three friends really bleeds into your videos and I hope that never changes. I would like to see how you choose your meat and ingredients in these videos though since a lot of us don't know what cuts of meat are good/ which vegetables are ripe etc. I love these videos and really hope you guys continue doing them :)

Awesome video...I have been barbecuing for so many years and have done countless racks of ribs that my friends always raved about! I tried this and realize I never had any idea it could be this good! I am new to sous vide and had a major fail once. This has made me a believer even though I made a mistake with tis by being to liberal with the Emerils as I forgot how little actual meat their is compared to the 10 pound pork butt I did at the same time. The texture ,moisture, and bite is unbelievable and this is going to be the only way I will make them in the future! I did however decide that searing them on a high heat with a Vortex for the Weber BBQ worked best for me. thanks for sharing these videos! without them I never would have known BBQ could even be soooo much better than I ever knew!

For sous vide the spare ribs, why 20 hours? How do you estimate the amount of hours? I love sous vide. Thanks for all your advise.

Oh man! Makes your mouth water! I love me some ribs! I know you don't like liquid smoke...but for some of us who don't have them - it works to a degree. When we do ribs we just put rub and a little sauce, then finish in a broiler for 10 minutes to put a bark on it! Love the rack system! Going to amazon for that one. Keep up the great work!

I just smoked two racks at 150 on smoker for three hours and now they are in the bath tub for 16 hours at 150. I cant wait to try these bad boys out. I also put the short ribs in your Korean marinade tonight too. By the way Pork Chops are amazing sous vide too. Keep up the good work guys....

Thank you for doing this video the other night I did some Alabama Silver Queen Corn and the bag kept floating to the top and filling up with air.. I thought I was doing something wrong, but was glad to see you had the same problem.. I had done every thing like you and it kept kicking out my weights... I am doing St Louis Ribs this weekend....

I'm so glad you tried corn on the cob. I learned from experience that they are buoyant as hell. I have the same rack system (just smaller) and I usually place it on top of the corn and then have to stack cookbooks on the lid of my water bath to keep the corn from floating. I really appreciate how you experiment with your recipes. One thing I've learned is that sous vide is sorta trial and error. You definitely help me from making too many errors! Keep up the good job!

I did a riff on this, and it worked. Yellow mustard + 1 tsp liquid smoke (mix in), dry rub, let sit for an hour, then 3 hours at 220F (smoke), vac seal, 24 hours at 155F.

Your videos always surprise me with there quality, but this one is amazing. Beautiful camera work, great audio, clean editing, and the background music is on point. One day at home when you have access to stove you should try Chefsteps Kung Pao Ribs recipe, it's absolutely amazing, my favorite way to have spare ribs ribs as of right now, the only reason you probably can't make it at the office is that the glaze needs to be boiled, though you could probably get around it by just sous vide-ing the glaze ingredients together at the highest temp your circulator can make the water, and then whisking to combine right before applying, ChefSteps also recommends deep frying to get a crust but you can Searzall it, I did not deep fry when I made them because I didn't have any oil for it so I did the oven method and they turned out great so with the Searzall it'll definitely not be an issue. Great video just like usual, and thanks for that video on when to salt sous vide steaks (I'm one of the ones who asked for it once you made the butter vs. no butter comparison), keep on keeping on!

I personally agree with you on ribs, I prefer the St. Louis over the baby backs. I'd like to see Ribs Sous Vide vs Ribs smoked and cooked 3-2-1. I've made some ribs on my offset smoker that were amazing, but the results are a little inconsistent. Keep it up buddy!

My favorite ribs! Mustard is a new one to me, though. I'm tempted to give it a shot. But being from TX, it might be frowned upon! Also, quick rib tip (which people probably already know). If you're having trouble gripping that membrane try using a paper towel to grab hold. It's like magic.

Guga, you have to try cooking these ribs with just using salt, pepper and garlic. Sear them on the grill then sous vide. No barbeque sauce. I do it entirely on the grill and can't wait to try it sous vide. They are ridiculously good. I hope you try this. Julie

STL right here. nice looking ribs guys. wish i could just reach through the screen and snag a piece. i love ribs, best ones are when you can give the bone a twist and it just slides right out. my favorite is jack daniels and honey to make the sauce. oh and if you haven't tried bicolor corn, its probably the best corn i've ever had. as far as the cookers go, i need something easy, stores easy and not super expensive. i have a small kitchen at the moment but cook big meals so i gotta be able to stick it out of the way when not in use.

I didn't try corn yet, but carrots and potatoes SV at 185°F/85°C were really a new experience for me, really worth a try for both flavor and texture.

Hey guys, you said you couldn't use the drippings because of the office setting but if you just get a cheap aluminum sauce pan you could totally use the searzall when you are outside to bring the drippings with equal part water to a boil, add a pinch of dissolved cornstarch or thickener of your choice and you would have awesome dipping sauces for your meals.

I have thought about sous vide ribs for some time but i have never tried it because my Vacmaster chamber is not big enough. But now i'm glad i watched you do it and I see that it is alot of work lol. But you made them look so good

Just did ribs sous vide for the first time and find it much easier for me. Maybe if I had a fancy smoker it might be different. I can manage a low temp smoke on my gas grill with pellet tube and throw them in the sous vide and know exactly when they will be done to the perfect temperature and not dried out or tough.

Hey! I have a great video request ( or at least I think it would be a great idea). Previously you have compared pre-searing to non- pre searing, can you please make a video where you compare pre-smoking and smoking afterwards. Also to add in some more interesting things to the experiment you could try smoking twice and seasoning before or after cooking it sous vide. Cheers!
