Woooow. As a Filipino, this makes me so happy that you’re trying our dishes. You even mentioned sisig!! Waw omg. Amazing. Cultural exchange is so important not only because it gives you more understanding of other people but it allows you to explore a whole new world and way of life and FOOD is a really HUGE part of that because people need to eat to live. Filipino cuisine was never really big or emphasized on even here in the US. People are only beginning to discover our flavors. I’m so happy you guys are emphasizing that exchange with our country and our culture. ❤️ thank you so much ❤️ I also LOVE korean food and I wish I was a better cook to be able to really enjoy korean flavors to the fullest.

I just wish that if ever you would visit Philippines again, try their unique desserts like Taho, Turon, Maruya, Sapin-sapin, Kutsinta with coconut flakes, Buko pandan, Ube, fruit salad, halo halo, leche flan and etc. Like literally those are gold and you would truly love it

The dish was named after the Bicol Express train that ran from Manila to Legazpi City, a major city in the Bicol region. :)

Im a bicolano but I really dont like this dish the scent of bagoong is so strong but I ain't hate the dish its a special dish here in our place (bicol region) such an overwhelming feeling that foreign people love our food.

No it is not originated in Bicol, I'm bicolano myself but do your research, it is originated in train station bound to bicol province somewhere in Manila where a woman invented that recipe and she named the food Bicol express.

I'm from Bicol (region), and in my small town, we cook it with more chilis than pork. The chili are the main part of the dish, the pork is just there for added flavor. Oh and, you can also try to fry the bagoong, before adding it to the mix.

Its the ratio of the coconut milk and the chilis(type of chili). The coconut milk waters down the hotness of the chili. Local chili like "sili labuyo" is not enough. Use red chilis, jalapenos or Carolina reaper. I also like Fish Ceviche (Fish Kilawin) with coconut milk. Since I'm here in the US, I can choose any variety of hot chilis.

I am a Bikolana, from where bikol express originated. The authentic way to cook it. You dont fry the pork. Just mix all the engridients altogether except for the chili. The meat must be sliced into pieces. Put all of this in the pan and keep on stirring it until the coconut cream thickens. When its almost cooked pour in the chili. Cook for another few Minutes depending on you if you want the chili to keep its crispiness.you can put as many chili as you want. The spicy it is the better. We call it bikol express because it means the hotness of the chili should be really super spicy hot.

@@stephanemahusay1059 if we put string beans then it is no longer bikol express. The authentic bikol express is pure chili(sili) or jalapeño only. With string beans it is already called ginataang sitaw(string beans in english) thanks! Altho, with string beans it will still taste good.

Well done doing the commercialised version of the Bicol Express. The authentic version of it is chilli pepper in coconut milk, (80% chilli pepper and 20% pork)

*Fun Fact:* Bicol Express is famous for it's spicy (chilli peppers) and creamy (coconut milk) taste, a staple in Bicolano food culture. BUT, it didn't originate in the Bicol Region. It originated from an eatery in Malate, Manila. The dish was named Bicol Express because it was derived from the train that passes the eatery which travels from Manila to Bicol and vice versa. Proud Bicolano here. 💗

It's called Bicol express because it was first sold in trains going from Bicol to Manila, like a vendor style food.

Bruh im a Bicolana and this is my favorite dish. We like it if you put more red and green chili and it must be salty and spicy. We, Bicolanos, are known for eating spicy foods like Koreans. my uncle can eat 10 plus whole red/green chili without drinking water. 😂

I remember my late father while watching this. He used to buy and bring home bicol express from the city proper (because we are not fond of cooking bicol express) because i love it, i will have it at lunch before going to work. Ohh i love Bicol Express. Woo cooked it well. We have different ways to cook that here and the way woo cooked it was very good!!! By the way we also love bagoong rice here in the Philippines. It would be better to use the small chilis like bird’s eye or siling labayo. They are small but very hot. These are the type of chilis used in making bicol express. I know some who would put around 20 pcs or more in making bicol express.

Dinuguan is not recommended for beginners to cook. If they don't know the amount of spices they put, might be the foul smell and taste are still present.

@@KIMnLEETV Kare-kare is usually served with shrimp paste on the side, but you need to be careful to not add too much shrimp paste on kare-kare. Kare-kare is a little bland on just itself so as you take a spoonful, also take a little shrimp paste (about pea size or less) as you eat. I personally prefer if the shrimp paste is cooked with lots of sugar on it, but of course you can adjust based on your taste. Thank you for enjoying Filipino food. ☺️ I was also trying to cook some Korean foods while at home. (The easier ones to cook as of now, I just started since the Quarantine 😅)

"BICOL EXPRESS" is a famous dish from Bicol Philippines. It is called bicol express because first it is originately from bicol second its called express becuase bicol is also famous for having a Train Express from Bicol to the Main City Manila. Bicol is the first and only Province that has a Train Express going to Manila.

the first bicol express wasn't called bicol express, it's nameless, this food is sold in the train station in bicol. 1 day a bicolano (people from bicol) compete in manila for food cooking competition, she became a grand champion in that contest but she didn't know what is the name of the food, so some filipinos named it bicol express because it was originated in bicol sorry for grammar😂

When you eat it in bicol. You will know the difference of the spiciness of the Bicol express than the other country in the Philippines. Go to albay Bicol.

Actually it’s a nice decision using samgyeopsal (pork belly) for this recipe. The pork fat helps in enhancing the flavor in Bicol Express, but I suggest adding more chili. The authentic Bicol Express has a lot of chilis, in such a way that most Filipinos can’t eat it (not kidding here since I’m from the Bicol region too). 비콜 엑스프레스는 너무 너무 맛있어요 😍

hello!! found your channel, and am a new subscriber today! my daughter has been asking me to cook her bicol express, looks like I found my "cook-book" or I should say, "watch-you-cook" LoL! nevermind that was a corny joke 😂 anyways, omgosh, thank you for your genuine liking of Filipino food! I'm a Filipino and was born and raised in Bicol region. I can truly say that you did actually cook an authentic Bicol express (we usually put more chilli tho). But the process and the way you cooked it was perfectly done! Thumbs up from a Bicolano!

there are so many coconuts in Philippines so we use coconut milk to a lot of recipe. thanks Guys for appreciating our cusine, just as Filipinos are loving korean recipe's as well. salute

I was born from Bicol Region, We are cooking Bicol Express with lots of red and green Chili... and sometimes we add chili oil if we want to make it more spicy. Sometimes.. we add Devils Chili to Bicol Express. Its nice to watch you enjoying our very own bicol express
