Bitter Melon soup was always a Taiwanese staple soup growing up. The soup is slow simmered with pork bones to give it a nice clear broth while the bitter melon, gives it a slightly herbal flavor. Pork Ribs (first) Instant Pot cooking:
High Pressure, Less, 15 minutes
After adding bitter melon (second cooking):
High Pressure, Less, 5 - 8 minutes. Quick or Natural Release are both good.
*depends on the ripeness of your bitter melon
