We cooked a boudin stuffed pork loin on the gateway drum smoker. We rolled it out and stuffed it with boudin, cream cheese and green chilis. Cooked it at around 325 flipping it about every 30 minutes until it reached a internal temp of 145 degrees. Seasoned up with Mojo Rub and The BBQ Rub. Sorry for the wind, we were under a tornado watch and the wind picked up big time!
