Thank you for the short tour to your charming home-city. I had only been to Moscow and - to St. Petersburg, where my good friend Vera lives. I appreciated it a lot when you showed Dostoyevsky's statue, I love his books. Brazo de Mercedes's is my sister's favourite cake. It's more than just a cake though since it represents the blending of Filipino and Spanish culinary traditions. You've done well, it looks tasty for your first try. PS: You and your mum resemble each other a lot, you easily can pass for as sisters. I love that you were named after your aunt Olga which only shows the special and loving relationship between them two.

Nice roll, Olya. I have a tip for you. You should put 1/4 teaspoon of cream of tartar to the egg whites before you beat it. The cream of tartar will make your meringue stable and thick like what you do with pavlova. If you don't have cream of tartar, you may substitute it with 1/2 teaspoon of lemon juice to the egg whites before you beat it. It will serve as a stabilizer. The consistency of your beaten egg whites should be in the "stiff peak stage." What you did was "soft peak stage." You did not put a stabilizer (cream of tartar or lemon juice) on the egg whites and you did not beat it until it reached the stiff peak stage that's why your meringue collapsed and very thin, which made it look like a sans rival and not brazo de mercedez. One more tip. You should put a tablespoon of cornstarch in the custard mix and vanilla extract to make it more full and aromatic at the same time before you cook it in the double boiler. Lemon and vanilla go perfectly well together.The consistency of the custard should be semi-firm and not runny. It's something like what you see in our Filipino leche flan. Happy baking!

@@CousinOlya What I mean was.. the one that being touch by heat and the one with paper must be inside and the colorize brown the on heated heat of oven...must be outside when you roll it.. the brown color must be the one visible on eye.

It’s also nice to see the travel blogs of Chef RV so you get to see other places like Japan, Korea etc. it’s a big world out there to discover. Japanese and Korean food is also amazing..
