Rus great vid. I liked that you pulled the brisket, wrapped it and placed in a cooler. That's how I have been doing all my briskets and pork shoulders/pulled pork for about a year and a half. Only difference being I use two layers of heavy duty foil just to keep from having any unexpected messes occurring. I do pull at 180°f and let it continue cooking with out additional heat, it's just not needed. Instead of saying it's resting though, I call it "finishing ". Never dry or overcooked. And more time sleeping while it finishes cooking. Now that's a win win. Have a great day, great video. 👍 🌤😃🍻
Heck ya fellas now that certainly was a fantastic looking brisket, that jiggle!!!! I think everyone eventually should have an offset if they are crazy about cooking BBQ because the of that extra smoky flavor they add! Plus you got more time to drink Smoky Whiskey!!!

Man you guys, that brisket turned out amazing! 😎 Offset is definitely the way to go when you're doing brisket. Other smokers are fine but brisket does best on that dang ol' stick burner. i like the fatty side, so i never could figure out which was which but you just explained that. so its the “point” that i like more than the “flat”. can i go to a butcher and just buy the point or does it always come point over flat? i dont do real bbq like you do, but i do love to cook it in my instapot pressure cooker, and still call it bbq, lol. but i know, tech its ONLY if something is smoked on a grill. in fact, im going to make “bbq” beef short ribs in the pot tonight, so, stay tuned. i have not posted one of those yet. your video made me wish it was already cooked, lol. keep up the great work, love your videos and thx for the visit “on line” to my page. it was an honor seeing you there.
Yes you can sometimes find just the point end of a brisket, and you can also find just the flat end of a whole brisket. I actually have a point in my freezer now for an upcoming video. Glad you enjoy my videos and I'll be watching yours as well! Thank you!
