Today marks the first bulk canning day of 2024, and even though it's blazing hot outside, I figured out a way to make it doable. We are canning the peaches in a light syrup and making delicious peach salsa. Enjoy!

When my old dad built his garage, he built it with deer hunting and venison processing in mind. It was a big garage with I-beams to hoist the deer up. As little kids, we were always fascinated. Later in life, he used to delight in setting it up for my canning kitchen. We’d go to a local strawberry patch and pick a ton of berries. Then the jam making would begin. I also did a whole lot of dill pickles. My mom would do the pears and peaches. My dad would sit in a lawn chair with his coffee pot and took it all in. Those were the sweet days of summer. Now I just do small batches in my home kitchen. Thanks for the memories, Chelsea. I love your canning videos. I adore your channel. ❤️

My grandma is from Alabama and the youngest of 15, her mom canned almost everything and put up 1000’s of jars every year .

6:03 I love my presto electric canner! We did over 100 jars in a week last summer through it. I have health issues and it made a huge difference in how my body felt. My husband wants to get a second one.

I love my digital canner. I now have two. What I like about them is once you get them to the actual pressure part you don’t have to constantly watch it.

If your celery gets woody or drys out, you can dehydrate it or freeze dry it and powder it! Works for me!

My great gran and grandma had summer kitchens off the main house for canning and pickling on the farm in southern Ontario. Boy those ladies fed everyone and anyone four hot meals a day while keeping the farm and house running.

Hey Chelsea, I have that pressure canner, I bought in 2/2024 and I am a newbie to canning. LOVE IT!!!! I have done pressure canning and water bath. I grow a garden and get so excite after Christmas thinking about planting. Then even more excited when you come on talking about it! Easy canner to use! Love that you are trying it out. To me best purchase ever. I am stocking the pantry to the max, when I can. I just love your channel and you, Dan and the family work so hard to make to work. I get excited when I see you post and look forward to seeing you again!

The Georgia peaches this year were the best we’ve had in years. I bought a presto electric pressure canner 2 years ago and love it. I’m able to keep mine on the canner and I have canned more since I bought it that I did in the previous 10 years.

Everything growing makes me smile so hard to. So love all the growing updates. I have never tried the peach salsa but I really think I will now and have that ball book with it in it. However hopefully Niagara did not have that cold thing happen I hadn't really checked yet. But wowsa what a wonderful canning haul. hugs

CHICKEN POT PIE Serves: 6 Prep time: 30 minutes Cook time: over 1 hour total Ingredients: PASTRY: 2 cups all-purpose flour 1 tsp. salt 1 1/2 cups butter, chilled and cut into thin slices 3 Tablespoon shortening 1/3 cup ice water Glaze: 1 egg yolk & 1 Tablespoon water to brush on top of pie Directions: In large bowl, combine flour and salt. Using pastry blender, cut in butter and shortening until mixture resembles coarse meal (work quickly so the butter does not soften). Sprinkle with ice water; rapidly blend together with a fork. Gather the dough into a ball, then flatten into a circle. Wrap in foil or handi-wrap: chill at least 3 hours or overnight. Ingredients - FILLING: 2 quarts water 1 broiler/fryer chicken(3 to 4 lbs.), cut up or your favorite chicken parts to 3-4 pounds chicken. 1 bay leaf and 1 garlic clove, minced 1 1/2 cups fresh or frozen cut green beans 1 1/2 cups thinly sliced carrots 1 cup diced peeled potatoes 1/2 teaspoon dried basil 1/2 cup sliced fresh mushrooms 1 package (10 oz.) frozen peas 1 can(16 oz.)whole tomatoes, drained and chopped 4 Tablespoons butter 1/4 cup all-purpose flour 1 cup heavy cream or Half & Half 2 egg yolks Salt and pepper to taste 6 pots (4 inch diameters)washed or 1 large pot or deep dish pie pan Vegetable oil Aluminum foil For filling, place chicken, water, bay leaf, and garlic in Dutch oven. Bring to a boil; reduce heat and cook for 30-40 minutes or until chicken is tender (You can do this the night before). Remove and debone chicken; set aside. Skim fat off from the stock. Add beans, carrots, potatoes and basil; cover and simmer 12-15 minutes or until vegetables are tender. Add mushrooms, peas and tomatoes; cover and simmer 3-5 minutes. Drain vegetables and reserve stock; set aside. Melt butter in another large kettle. Whisk in flour and cook until bubbly; stir in 1 1/2 cups of reserved stock. Freeze remaining stock. In a small bowl, stir together cream and egg yolks. Whisk into the sauce; remove from heat. Season with salt and pepper. Gently fold in reserved chicken and vegetables. To assemble pot pies you can make individual one or 1 big one but it will take longer to bake, brush pot(s) with oil. Line each pot with a 15 inch x 12 inch piece of foil; pressing the foil gently down into the pot and being careful NOT to tear it. Fill each pot with about 1 1/2 cups of the filling; leave about 1/2 inch headroom; set aside. Roll pastry to 1/8 inch thickness; cut into six 6 inch circles. Place 1 circle on each pot, turn down the edges and flute the ends. Cut 3 small steam holes in the center of each pastry. In small bowl, lightly beat glaze ingredients; brush on top of each crust. Place pots on a baking sheet. Bake at 425 degrees for 30-35 minutes or until crust is browned and the filling is hot and bubbly. Place one stick with seed packet in each pot before serving.

I live in NW Georgia and drive about 45 minutes south to Alabama to buy my peaches. I found a farmer who will pick them the day before and they are wonderful!!!!!

Just put a shade cloth, or curtain over your peas. Works great to keep them from getting to hot. When it gets hot, I have curtains hanging everywhere in my veggie garden. In the evening I remove them. Saved my garden during a heatwave when it got up to 40 °C, my neighbors didn't bother to do that, and sadly lost almost all their veggies.

Colorado has amazing peaches on the western slope. Palisade peach stands will start popping up on the eastern side of the Rockies in late July/early August…I cannot wait 🤤🥰

I’m from Kentucky and in the summer there was always canning going on by my mom and grandparents. I am not a big canner however my husband cans tomato juice and tomatoes every year. I know you can potatoes I have never seen my family do that. I know you can use canned potatoes in soups so do you dice then when canning or do you just peel them and keep them whole? I love your channel? Now that I’m retired, I hope to learn some canning skills.

I encourage on your next shopping to buy a whole chicken if on sale, here it has been over 100 degrees for over a week even up to 111 degrees so don't want to heat up the kitchen: Glass or microwave Roaster Roasted Chicken in the Micro-wave oven use clear glass Pamered Chef Poinsettias Oval Roaster 1 whole chicken 1 Tablespoon Olive Oil SEAONDING MIXTURE: 1 Tablespoon flour 1 teaspoon paprika 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon dried thyme leaves cook in Microwave uncovered 15 minutes while you make the glaze. In small saucepan warm 1/2 cup Apricot Preserves and 1 Tbsp. vinegar. Spoon over chicken. Cook in Microwave uncovered for 15 minutes longer or until till chicken reaches 165F.

Georgia Peaches The Best! Lane Orchards provided a farmers market/store with the most delicious freestone peaches I have ever eaten. I have canned 9 quarts. But my peach jam was runny. Need to get your recommended Pomona pectin. Hope you get a cool off soon.

I have a.Nesco electric canner… I LOVE IT!!! It is great for me because often I don’t have enough product for a full (traditional) canner load, and I can process just a few jars with just picked ingredients and not let them begin to lose condition while waiting for enough product for the full traditional canner load. Plus, using it is sooooo easy!!

I have many of the Tupperware Fridgesmarts , they save me so much in keeping my produce fresh. I have has lettuce stay crunch for 28 days and it would have been longer but we ate it all. My husband came hind from a work BBQ with a case of romaine lettuce, I washed/cut / spun and put it in the large ones. I have Asparagus that’s 10 days and still fresh in my fridge . Grapes and Strawberries, mushrooms all have a much longer life in the fridge .

Chelsea, thank you for answering a question for me! I planted a whole bunch of flower seeds, but not much has come up. One kind of dill-looking flower has been coming on in a few places, but none have bloomed. This is the first time I’ve planted flower seeds, so I had no idea what it is, and have just been waiting impatiently for them to bloom, until you did your garden tour and pointed yours out. Cosmos!! 😂 I love getting to hang out with and learn from you. 😊

I preserved ( in jars with a simple syrup) Georgia peaches a few days ago. They are delicious! I also made Peach Jalapeno Pepper Jelly. Your peach salsa looks delicious; I may make that too. Last year, the Georgia peach crop was ruined by a spring killing frost. I am so glad that you can enjoy Georgia's abundant crop. Lee from S.C. ( we have delicious peaches, too)

We don’t live too many miles apart but your garden is doing SO much better than ours. Our largest carrots are maybe 3” tall and lots are barely germinating. Same with beets and Swiss chard. So sad. Hopefully we’ll get something in August. Congratulations.

When canning beets I put in a roaster over night in low oven - next Morning the skins will just slip off when squeezed and I use the liquid as part of the canning liquid.

I just put them into salt water to stop the oxidizing....do it for all my apples too....cheaper than lemon juice....been going it this way for almost 50 years.

I love turnips,here in the South we slice them up cook them in a big iron skillet till they are soft usually with bacon grease to flavor them ,then when they are soft we mash them up like mash potatoes,add salt and lots of pepper when they are cooking.delisious.hope you try.going to try the peach salsa I'm canning up tomato sauce to day and cutting up okra to flash freeze to put up in freezer.i also found a great way to peel my tomatoes instead of blanching them I core and cut a place in bottom take all bad spots off freeze them over night 24 hrs then in thaw them and the peelings come of so easy I don't waste as much of the tomatoes,then I cook for spaghetti sauce or tomato sauce.Have a great day thanks Chelsea.❤

Chelsea, our average temperature where I live in the UK this summer is 17 C my cucumber plant has given up and died and my tomato plants are thinking about doing the same, depressing I can assure you. I have weather envy can you can some sunshine and post it over here.

I am a big fan of regular mouth being for liquids or mostly liquidy things. Wide mouth for anything I might need to use a butter knife to get stuff out.

This is a comment about an earlier video where you were talking about avid bugs. Instead of spraying them with water use milk. It will kill the bugs. This is the advice from a u-tube called " Liveing Tradisions Homestead ".

I​@LittleMountainRanch I do them in my Instant Pot, but you can do them on the stove top as well. Wash well and strip out tough stem, chop, add water, a little sugar salt, pepper and a couple of turnips peeled and chopped into bit size pieces. I cook at high pressure 25 minutes. You can boil on stove top for about 45 minutes. You can add onion, cooked bacon and red pep per flakes prior to cooking. Serve with cornbread and pinto beans.

Steam Canning: When I first saw those steam canners I thought whats the difference between those and a pot with a lid? Then Rosered Homestead came out with a video explaining the science of steam canning. My thoughts were right, steam in a regular pot is the same as steam in a steam canner! The only time that steam is different is when its pressureized in a pressure canner. I use my pressure canners, lid on, no weight to steam can. No extra purchase needed!

I bought a Presto electric pressure canner and wasn't happy with it I did more research and stumbled up on RoseRed Homestead who is a professor. She tested all of the electric pressure canners. The Nesco was the only one that met the requirements for temperature and hence the only one safe for use. People may want to do their own research. Also, not a small difference, is the price.

How long ago was that? The prestos are currently the only one I’m aware of that have been USDA tested and shown to be safe for home canning.

​@@LittleMountainRanchthe Nesco/Carey canner failed safety testing by Utah State University extension. It does not get and stay hot enough at high elevations to reliably kill botulism spores. The Presto precise is nearly finished with testing by Oregon state university and all reports are that machine appears to meet safety guidelines, but the final research has not yet been published. Side note, rose red is not a professor and does not 'test' these products in a scientific manner.

You may not know this trick but you can use the holding pan with all of the juice but can this as syrup just can it as peach juice to make jelly and heat with pancake syrup delicious.

I thought you got a steam canner it works great for stuff like that you use less water so it reaches steam fast. You can can so much faster and it’s not so heavy
