These lovely Italian biscuits have a jam or cream filling sandwiching two shortbread biscuits. The top one, of which, has a hole in the middle to give a bull's eye like appearance to the biscuit. Using any jam you wish, or something like pistachio cream or hazelnut cream provides a wonderful filling to complement the crisp and buttery biscuits. Perfect with a cup of tea.
