No, dude, you got it. I'm in Nashville and Memphis a couple of times a year. I've tried a bunch of places, but the best places I've had it it's just really, really good fried chicken with an emphasis on spice. In a lot of places it's just mediocre or bad chicken with an emphasis on spice. I've never seen what the fuss is all about.

My dude showed more emotions in that initial bite than the rest of this channel's videos combined multipled by a hundred.

chess pie filling is usually butter, flour, sugar, eggs- basically a really sweet, somewhat custardy filling. the actual real way to identify a chess pie is that it is *sweet*. Usually vinegar or lemon juice is added to help offset the sweetness, somewhat, but it's essentially a sugar-custard pie. I think the version you had might have had a bit of cornmeal in, which does something interesting to the texture. I have a massive sweet tooth and chess pie is usually much, much too sweet for me.

I've lived in the Austin area for about 20 years, and I feel the same about our restaurants. As soon as there is notoriety the food quality starts to slide. It's like you have to know when the best chefs/cooks are on shift or something because it's so unreliable. And when local places become chains, the first original and sometimes the 2nd are still good but the others aren't the same. It gets disappointing when you don't have much money or you are like me these days and just don't like to go out much. Is such a roll of the dice.

7 minutes in makes me so happy because I am from south (wayyy south, like start swimming) Alabama and I have always told people visiting to find a place that looks like a cafeteria with an older woman throwing down in the kitchen and you will have the best time ever for half of what it should cost.

a lot of the mild options has dry chicken because no one orders it so it just sits there, happened to me in nandos where the spicier ones were actually good

Ohhhh! You gotta learn about Chow Chow my guy! It's different everywhere, but it's basically just a spicy pickled topping. I love it on collared greens. Also, country fried steak is amazing, I agree.

Chess pie is pecan pie without the pecans basically that’s how my cousin explains it and she makes both frequently for our family 😊 thanks for the vid and as a native I didn’t know we were popular for our hot chicken till I moved out of state and every place had at least one restaurant selling “Nashville hot chicken” which was hilarious to me as a kid

The biggest reason our cornbread doesn't taste like jiffy is we don't sweeten it. It's oil, self-rising cornmeal, egg, and buttermilk. And chess pie tastes a lot like pecan pie to me, but without the nuts. You should try southern biscuits and gravy the next time you're down here, and maybe visit the Pancake Pantry if you go back to Nashville or Gatlinburg.

You need to read the essay "Some like it hot" by David Ramsey in the Oxford American, its an amazing short story about Prince's in Nashville, but the original location, and I think you'll really enjoy it. Its a great piece of writing that really captures the experience of the pain.

I gasped when you covered your fingers in the 'Shut the cluck up' oil because I know from personal experience that you'll need to wipe the tears away very, very soon. First time I went to Hattie’s, I got the STCU flavor, so painful and so delicious. They used to have those little honey bears at each table. And it worked so well with the spice. Now there’s one in Memphis and I love gotta restrain from the pain on the daily 😩

The Prince's in the food court is pretty bad. The original location in south Nashville is better, but honestly (probably blasphemy) Prince's has always been pretty inconsistent. Lots of hot chicken fans in Nashville turn up their nose at Hattie B's for not being authentic, or waffle about it being too "touristy" or whatever, but the consistency goes a long way. It's good. Always at least a solid plate.
