Just a heads up. If oil splashes on them rubber gloves it's gonna melt together with your skin leaving much MUCH worse damage than without them. Might wanna get some proper heat resistant gloves

It does help cool the oil down before burning your skin. You’re absolutely right though, the only thing worse than getting droplets of hot oil on your skin is hot oil with melted plastic.

If you ever decide to come back, Duff's and Bar Bill are the other two popular spots but there are a million dive bars with great wings. And yes, stick to the tourist spots on the American side of the falls, otherwise you'll get robbed.

As a Canadian, yes our side is nice, we get a full view of the falls instead of a side view, very different. You should visit some time and go down the touristy area.

Hope you enjoyed your quick trip to Buffalo. Not sure if the wings are worth it for a single days drive, but hopefully they were good. At least you went to the falls too. And you are correct, the Canadian side is better. As for homemade sauce, I think the bottle you purchased is supposed to mimic the completed sauce with butter and seasoning already. For your recipe you'd want to use Franks or some regular cayenne sauce.

6:13 I see Oshei Children's Hospital and UB (University at Buffalo). I'm from NYC and I went to Buffalo for college and post-doc for like 9 years. Buffalo Buffalo or downtown Buffalo is very shady and ghetto. Amherst, NY (the suburb) is the one of the best places to live in America (in my opinion). I miss that place so much!

I used to work in a popular place for wings, and you can skip the drying in the fridge. But what you do have to do is bake them first at like 350 until almost done, then finish in the fryer to crisp them up.

If you do bake I recommend putting them under the broiler for a few seconds to a minute on each side to help it get crisp.
